    I am so glad that times have changed. 21 years ago when my husband and I decided to live like your family everyone thought we were insane. Now everyone wants to live like we do. You are doing amazing.

      I was raised on a large farm and was self sustaining and I’m 62. It’s been going on a long time. It’s a great life.

      My MIL was horrified when she saw where we moved to in the country! Then we got goats, chicken and turkeys! Now she tells everyone how awesome we have it!!❤️

      Your beautiful ❤️🌟 BLESSING of towels remind me of the kind my oma GRANDMOTHER from GERMANY. She would make them and mail them to us. I wish I had some. She made hankies for me. I have everyone of them. They are so lovely. 60 years old. And look brand new.

    I love this homestead! You cook, bake, can, freeze, dry preserve, roast, smoke, make cheese, plant & harvest a big garden, take care of a large family, YOU ARE AMAZING! So is the rest of the family. ❤

    What you made is Indian cottage cheese (paneer) made in every home in india. Use lemon or white vinegar and rinse it with water in cheese cloth to het rid of sour flavor before hanging it to drain. It’s a Good protein alternative for vegetarian. Used to
    make lot of curries as well as desserts. Look up indian Paneer curry recipes to make so many vegetarian dishes. Look up Sandesh or Rasgulla for just two of a million indian desert made with it.

      I press the panir and then cut in cubs and saute in ghee (butter) with spices and add it to soups or veggie dishes or sometimes to salads.

      Here in NC us southerners call it Farmer's Cheese. And some rinse it n some don't. Lol sometimes I do n sometimes I don't n I try n use lemons but more than likely have distilled vinegar on hand as I use it in the washer as a softener too n cleaning sometimes. Oh n I usually use a tea towel cause don't always have cheese cloth on hand.

      @@TheHollarHomestead Hi Meg, What lights did you install in your kitchen? I am redoing my 1991 mobile home and will be replacing the lights. I need to know what recessed lights you used? Are they LED (I hate LED bad for eyes) Is that all that can be installed in a mobile home ceiling? I should probably be asking Ben?? Lol. Are you happy with the lights in your living room the recessed lights?

      Pamela remme they are not recessed. We have track lighting and hanging lights. They are LED, sadly, but that’s all we could find. We got them from Lowe’s.

    Fresh churned butter on homemade bread in the morning with a cup of coffee with home made bacon and fresh collected eggs cannot be beat. The flavor is amazing, the smell is something you dream of, you are so very lucky. Little Buggy Bear will be a hand full when she gets bigger. You and yours are truly blessed, love watching your channel, keep up the awesome work. When things slow down a little Meg will you be showing us your knitting skills later on?

    That bacon looks amazing! Cheese like that is so good. I make it sometimes with store milk. Meg, I don't think anyone could ever pin the word "lazy" to you. You are always doing for your family. Creating good eats and storing them for the winter is a lot of work but rewarding work. Bless you all.

    Seeing your orchard in that almost panaramic shot proved how big it actually is. The last time we saw it you really couldn't tell how many of those "sticks" there were in the ground. Meg, I feel you for the impatience of wanting them to be big enough to enjoy the fruit. I can see picnics under their shade and maybe a roadside stand to sell the excess.

    Hi - you might want to remove the grass from around the trees in the orchard, or the grass will steal both water and nutrients and the trees grow much slower. Just remove the grass, cover the earth with paper or moss, and putt cut grass on top around the trees. I did this with one of my roses, and kept up the cover over several years, and the rose is now three times as big and had lots of flowers.

      Wood chips make an excellent mulch around your fruit trees. Put a cylinder of hardware cloth around each tree to protect from rodents and then eight inches deep of wood chips surrounding the tree out as far as the drip line. Keep expanding the chip mulch as the drip line expands and keep the mulch deep/thick.

    Tip: wash your curds & it won’t taste like vinegar. You can use lemon or lime as well & not rinse it. When I do that I add hot peppers & garlic. So good with tacos!

    I have made this cheese too many times to count with our goats milk. What I discovered was that I could make raw (fresh) milk cheeses that did come out softer and more moist. It melts, too if done right. You can Play with reducing the temperature below what would pasteurize the milk. I would freeze what I didn’t need. My favorite flavors are chipotle chive and garlic dill, using freeze dried herbs.

    Such a beautiful calf and cow. Meg, I'll have to try making cheese like you did today. I am perfecting mozzarella and curd cheese. So far cream cheese is okay. Cottage cheese is a goal too. If you have a video on cream cheese or Cottage cheese those would be so cool.

    I never want your podcast to end cause it's so interesting to see all the things you're doing!!! Often I watch it 2 or 3 times! Glad you're going to raise Guinea hogs!!! Meg, your cheese making was so interesting. Anxious to see more goodness you use the milk for!!! When you said you'd been lazy about making bread and getting bacon ready to smoke, I thought, you girl, are never "lazy"! You and Ben (and boys) are the hardest working people I know!! I love your podcasts so much. I'm so happy watching you grow your farm!!! Sad hearing the Skunk got some of the meat birds but so glad Meg woke up to know something was happening. The whole time I was just thankful that didn't happen when the boys and Ben were at the Rhodes campout!🙏

      The boys are old enough to make bread, treat it as a science experiment. Kneading will build muscles too!

    I make this often. I press it and use it as the indian cheese, paneer. I usually cube it and then fry it for many different indian dishes. I also leave it as chunky curds and use that in poutine. So versatile, so delicious. 🤤❤

    Meg you amaze me doing all the scratch stuff with Buggy. Homemade bread, smoking your own bacon, and fresh cheese. Your family will not go hungry with you around. Ben you have really taken to all the animals like you have done this all your life!! Plus you brought your mechanic and knife skills. Add milling your own wood it’s just fantastic how you have built this healthy self sufficient homestead. Your boys look so happy and Buggy couldn’t be cuter. Carry on my (ex) fellow Californians.

    That whey is so healthy for people😄. Use it in making bread, use it as a hair rinse and leave on for a few minutes then rinse out; leaves hair nurished and very healthy. Use instead of soap on body and face in shower; nurishes our body as it gently cleans. Put into smoothies for gut health. It's just amazing! Not just for animals! Keep left overs in frig😄. Can keep about 3+ weeks.

    I grew up on farm. We raised all our food. Garden, cattle, pigs in chickens. All we ever knew. Mama and daddy worked full time jobs besides. We had a wood stove until I was about 10yrs old
    I churned every Saturday and made butter. Great way to grow up. I'm 79yrs old now. Daddy had a garden every year till he passed away at age 85. Mama always canned vegs and made jellies and jams.

      I recently read about “guard donkeys” and they sound great! They’re cheaper to feed than dogs, very protective and very independent. There are fun videos on TH-cam showing them taking care of business - they can be fierce!

    Your homestead has really gone next level !! So awesome. May I suggest Guinea fowl. They are awesome at alerting & even running off a lot of predators. We have 16 & they truly WORK the homestead. Will NOT destroy your garden while snacking on bugs. They eat mice , ticks etc.

    When it’s growing season for the orchard you can spray the whey as a bug spray on the trees and developing fruit. Ooo, one other item draw the mulch about two inches away from the trees.
    Yea for the Guinney hogs!
