    The gas station around the corner from us has apple trees in the tree plat around it. 5 different varieties. A few years ago I asked the manager if it would be okay if I picked some of them. She was thrilled because it only created problems for their mowing crew. Now she actually calls me when the fruit is starting to fall from the tree so that I will come and pick them for her. FREE FOOD❤ and they're just left to grow so no nasty murder chemicsls on them.... well it is a gas station but you get the idea🤭

    My grandfather made applejack on his farm and it was a holiday thing. I even sampled it as a kid in the 50s which was a time of freedom and individuality that i hope we can reboot this country to and live without fear of government and corporate games. If you want to keep the cash flowing just keep using it for everything. Game won.

    Apple jack from old world Germany is made up of apple cider, raisins and sugar. A glass jar and air lock is needed to finish it off after a few weeks. When finished, father-in-law used to haul it outside in the 55 gallon wooden barrel in the dead of winter and siphon off what didn't freeze. It could only be sipped when done, but helped the Germans make it through the cold dark winters. 😉

    My husband and I got just done stocking up at the scratch and dent discount store by the Amish that we go to. He kept saying "that isn't a good price..." and i would tell him "it is for the current times" he got home, got the tiller out and doubled our big garden and ordered 3 raised beds. We're committed, one step at a time to getting independent!

    I am in my mid 60s. My dad was little in the depression and said sugar and coco powder were great to have on hand. His mom would make small chocolate cakes and trade them for stuff!

    I did this with pears from my parent's trees. The people who didn't like cider due to it being too sweet enjoyed this. I also used the leftover fruit to make pie. People couldn't finish a slice before feeling the effects.

      I've been looking at unrestricted off grid land in Missouri and Montana. Looking for some land with a creek so as to use hydro power for electricity. About to go on the road trucking to save money for it and the cob home I plan to build on it. So my question is how does a community partnership work? How much land, how do people buy into it, will there be homeschooling for the children, how to split the responsibilities, etc.

    Stacy, you are bringing up some old memories for me. Back in the 70's I worked as a jailer, and your apple brandy is one of the things the inmates would make from fruit saved from their meals. Can't tell you how many times one of the hidden bottles would explode in its forgotten hidey-hole!

    My husband makes wine. He said slicing the apples thinner would make the absorption process work faster. We have a hand crank apple slicer that makes the apple look like a slinky. I’m definitely going to make this. Thanks Stacey!!!😊

    My favorite ferment by Stacy has the organic red cabbage and gala apple (I add Chinese Daikon radish) in it that is my very favorite sauerkraut type fermented food!

    Is there a PDF version of Stacy's fermenting cookbook? I live in the UK and it's almost £100 to buy the book and have it shipped here. I just can't afford that.     I have made homemade wine all year. I can produce as much as 4 gallon in a 21 day span. And it has a kick. After I strain it I store it in a good dark area where it not bothered. And it can easily be turned into a brandy. Not a big label brandy but one that can be used for most things. I have figured out how to get a high proof and it's been requested by many over the years so I decided I make as much as possible for barder items. And the fruit I tried making a jam it's not bad either. Thank you guys appreciate everything you share.

    My late Aunt used to take fermented golden raisins soaked in a good gin for her arthritis..and she swore by it.....She also made a cough & decongestant syrup out of something called horshound... she gave bottles of it out to family members in the early fall and that's what we took if a cold was coming on...

    Could you do something similar with peaches? My grandmother would talk about her mom making peach brandy. She said her mom kept the jars behind the sofa and when my grandmother was little she crawled behind the sofa, fished peaches out of a jar to eat and knocked herself out.

    Im in the process of making apple brandy i learned from you several months ago love it although my jar after 8 mo. It has a crack lost all the liquid. No worries i bought anouther jar and just transfered it and back at it .

    I found a dish soap that has 30% of the highest grade alcohol in it. It is so pure and all natural and you can wash your vegetables with it along with your entire house dilute it it’s from the company called Atomy out of Korea that’s sold also in the US and other countries.

    I have to apologize to you Doug about my commit about the trailer of beef being stolen! I didn't honestly think it could be unhooked from the truck without the Driver waking up!!! I was wrong and I'm truly sorry, please forgive me? Y'all have so many good tips for us to help when it gets really bad and I know it's coming! Were seeing more empty shelves and coolers that are getting bare in the grocery stores here.

    My Old Lad was a kid in the German Weimar republic - the "You need a wheelbarrow to carry the cash to buy.." Era - the 2 things that were Uber-Valuable were 1: Bread & 2: Butter. Those 2 things. My Old Lad baked the bread - he was smart, so he had a big wood fired oven & baked the only bread going in the area.
    One day the soldiers landed in - he wasn't "The right sort" in their eyes - this was the "end of the line" moment - Politics. He got chucked up against a wall, they raised their rifles - Game over... He shouted that if they fired, their Bosses bread would burn as it was in his oven - which caused their Officer pause for thought - bread mattered. So the rifles got lowered.
    Never underestimate how valuable simple bread or butter can be. The basics. When it's all boiled down to just survival. Heat. Shelter. Bread. Butter.
    That ^ is, btw, true. Not the makey-uppey stuff. There's a reason millions say "Give us this day our daily bread.." when they pray - most also prefer if the bread has butter on...Some say the French Revolution was a bread based revolution.. who knows? Brioche is nice - but must have been scarce. Bread matters. Some call money "Dough" - or "Bread" - there's Old reasons why. Making a crust,,,

    Thank you, Stacy! I will get some gallon jars from Azure Standard from Dufur Oregon. And I am a retired midwife. I had no idea that sugar Beets were GMO! GMO foods, like corn, causes burth defects in the umbilical cards and amniotic sacks! I learned about this from a midwife in Bali.

    I worked outside in the garden today. I usually sit inside and work on crochet projects. I plan on getting out more, now that the bugs aren't biting. And thanks to Noel, a community member, who mentioned using lemon balm for bug repellent. I found a great recipe using lemon balm and other herbs I grow. I intend to spend more time with nature. I need this.

    Thanks Stacy for showing an older jar of honey garlic! I started mine the following day after watching the vid. I'm pleased to say, my garlic has settled and is under the honey layer and smells incredibly good! I also started a gallon jar of the Master Tonic aka Fire Cider.       That brings up a question that entered my mind when I was watching Stacy's video: Is it wise to use apples that contain worm holes or insect holes when making this brandy? Sounds dangerous.

    We planted a couple of Apple trees this year, it will be a few years before we get any, but my neighbor who had an apple tree not producing because Apple trees need at least 2 to produce fruit, is now producing fruit. So we helped his tree with the planting of ours.

    Amazing timing of this video, besides being apple season ... I was out walking today and wondered about different ways to seal different jars. Why not use the metal seal with the ring or a plastic lid? There must be a way to reduce our use of plastic. Was also thinking of the remarkable Rachel Carson (Silent Spring, book, 1962) and her awareness of the environment .... anyway ... very helpful video ... love, love, love apples!

    I can't wait to try this. I just made 1 1/2 quarts garlic honey. Now, when you made your apple brandy you put plastic wrap over it. When you were showing older versions of it the jar had a lid. When do you put the lid on?

      When my grandparents made wine they would leave a balloon over the top to allow the gasses to escape but let the ferment continue. Maybe that's why she uses the plastic wrap at first?

    Here in Western Washington, we have apple trees everywhere that are abandoned orchards from old homesteads and such. By the side of the road, etc. Pear trees. If the apples don't get picked up, deer are attracted to them, and nasty yellow jackets as well. Theyou have both an overabundance if yellow jackets picking on you, and/or dead deer that got hit by cars bc they want those apples. They recently made a law here where you could file a free permit online and harvest the deer hit by cars, but you still have to let it suffer if it is still alive and let a cop pop it. But we get free dog food that way, if it's fresh enough, and that way coyotes don't come around our livestock. We try to keep things cleaned up.
    Anyways it makes me nuts that people line up at the food banks, who are having trouble meeting the demand, and it drives me nuts that there is all this free food all over the place but people are either too lazy to pick it, or they get turned off by a bug or a hole or blight. It drives me nuts that the govt says people have to have USDA certified food when it's everywhere to be had and we can make our own decisions as to whether or not it's good. We have become so dependent on them, we have literally lost our common sense. There's so much food everywhere growing wild, it's insane. My daughter lives in a household of people that won't eat anything that didn't come out of a box. It makes me nuts that so much food goes to waste, and we deliberately poison our food with chemicals. However, I'm also learning how hard it is to keep the food growing and pest free without...chemicals. Everything in moderation, like you said. "Real" milk, straight from the cow ..has 3 or 4 different products in it. When it goes bad you can still get cultured butter, clabber, sour cream, or yogurt. The ultra pasteurized stuff? It can k I l l ya when it goes bad. That's handy for repeat business, huh! Cha-ching! Meanwhile the actual farmer makes pennies. This system is crooked as all get out and bass ackwards.
    When we lived on one acre, we would go to the neighboring DNR land or boat launch down by the river and harvest pears and apples from abandoned trees. We ate GOOD when we were poor. Because we knew where the food was. A friend we knew would have industrial sized crates (lift w a forklift) of all manner of vegetables. They were past the pull date, so they were "animal food". Ironically, he had gotten them from a food bank. That was havi g trouble meeting the demand. Throwing away literally semi truckloads of edible food. ...Let that sink in.
    We got tomatoes that one year in abundance. The seeds went down the drain into my grey water fountain setup (also illegal), and we had tomatoes as noxious weeds all over the property In rainy Western Washington. One crate from our friend was all we could eat. We canned tomatoes until we were SO sick of tomatoes. Dehydrated them on cookie sheets inside one of the old dead cars. On top of the car in the summer sun with some screen or cheesecloth over them to keep the bees and flies off. All the things the food police say not to do while at the same time saying "We can't help you." When we were broke. Those tomatoes lasted us 4 years- tomato sauce, soup fixin's. Dehydrated tomatoes dipped in olive oil,.salt, and pepper for snacks and gifts. We did the same with the apples.
    Every year there is a bumper crop on something, and I believe that's God's provision, like when Joseph put away grain in the Bible for the times of drought. If you have way too much, there are elderlies that can use it,we help out our kids bc they work full time and are super busy. Because my adult daughter got a freak brain tumor 2 years ago, I take every opportunity to stuff wierd plants and herbs down her. She hates it, but I don't give up.
    So anyways, when there's a bumper crop of something, I save as much as I can. Last year we had apples like crazy. This year, the apple trees are pretty bare, but the blackberries went nuts. Incidentally, apples have vitamin c, and guess what helps fight off the c? Had a bumper crop of the very thing we need for the illness that's coming. We had it twice, and I'm fat, older, high blood pressure, diabetes, asthma and allergies, sleep apnea.... They woulda had me jabbed up and stuffed with a breathing tube, no thank you! And I was reading that r em esdivir, the drug they give you a long w the tube for c had line a 50 percent rate of axing people! No! I read it in the actual govt reports myself, which were hard to find.
    I was so sick the first time we got it, I really did consider going into the doctor and boy howdy for me to consider that, it's pretty bad. I couldn't get no air. Gasping for air in between coughing. It was scary. Hubs was actually trying to talk me into going in. I'm glad I didn't. I also smoked mullein, it's a fixit for asthma, and also grows here. Opens my lungs right up. Usnea is an excellent expectorant. I told him when I pass out n don't respond, then he can take me in, but until then I was stubborn as heck. My mistake was that I was lazy and didn't start my regiment at the first sign of sick ness of drinking usnea (and other stuff, ACV, onion, garlic, turmeric) tea right off the bat. Usnea is a (lichen? Moss?) that grows here prolifically, and is LOADED w vitamin c. The natives here would powderize it and put it in their food daily. I harvest it every year and take some to my family on the other side of the mountains. They all think I'm wierd. But as things get wierder in this world, it appears that I have become the native plant person, as my elderly aunt passes on. One of my heros. She stopped cancer twice with diet. It's her heart that's getting her, now. She's in her 80s though, she's done pretty well for having started late.
    So, yes. Each plant does a thing. We all did this in pioneer times. Yes, some died. And some didn't. Modern medicine can be a help, but we've quickly seen how they try to take over and tell us what to do with our own bodies, by force. I was arguing with the docs way back in 2001 or so. Quickly saw that in order to pay my bills, because wasn't NO govt agencies helping with that, I looked. A lot. That I would have to take it up on myself and only go for major emergencies. They aren't bad people, it's just that they are of the mindset that they know better what goes on with my body than I do. And maybe they do? I dunno. But ultimately it is GOD that says when I d I e, and last time I checked, them doctors don't walk on water.
