Easy Delicious Pistachio Baklava

  • Pistachio Baklava Recipe
    Ingredients:
    350g peeled pistachios
    500g granulated sugar
    2 tsp cinnamon powder
    1 tsp nutmeg powder
    2 cups melted butter
    22 filo pastry sheets
    Sugar syrup:
    450 ml water
    500g sugar
    Method:
    Combine the water and sugar then simmer on low heat for 10 mins
    Set aside to let it cool
    In a food processor blend the pistachios until coarse
    Transfer the pistachios to a bowl and add the sugar and spices
    Butter the base of the baking tray with the melted butter and place on the first filo sheet
    Brush the filo pastry with butter until the whole surface is covered
    Repeat for 10 more layers
    On the 11th layer scatter on the pistachios
    Now add on another 11 layers of filo pastry, making sure to brush each one with butter
    On the final sheet cut the layers into diamond shapes, then cover generously with melted butter
    Bake for 40 mins until golden brown
    As soon as the baklava is out of the oven top it with the cooled sugar syrup
    Once cool decorate with crushed pistachios
