    Gundruk is love. I live in Maharashtra currently and don't get mustard leaves easily. So I ferment raddish leaves instead to make gundruk. Equally tasty. Sikkim is my favourite state even though I'm from Shillong 😄

      When you use raddish leaves instead of mustard then it’s called ‘Sinki’ which has a more sour taste than that of Gundruk.

    I came back from Sikkim 3days ago , it was a such a great experience ✨ we went to nathula pass and China border, changu lake Gangtok city 🌆 and the night life is awesome in Gangtok.

    Hi Frenchy, you could visit Kalimpong which is just three hours from Sikkim. Some churches there have a French connection, you might be interested 😊. It is a lovely place too. 👍

    'Gundruk' is fermented, cured mustard greens and other veggies, basically! It has sm similarities with German Sauerkraut or Korean 'Kimchi', but is more on the greens platter...Himalayan specialty fr Nepal, Sikkim and adjoining areas...

    If you can I would highly recommend you to visit The Andaman and Nicobar Island. You can catch a flight from Kolkata also.

    Man i love Gangtok. I have been there twice and i have probably eaten every thing the city has to offer. It has amazing cafes and restaurants. I love exploring the little streets. Beautiful place.

      That's very commendable & I fully support it specially d fine on spitting. God knows it's needed in my state, sikhar/paan spitting is disgusting/unhygenic af & is one of main reasons behind dirty public places.

    Hey Pierre. I’ve discovered your videos and explorations recently and it’s amazing you portray your experience. Moving on I just wanted to clear out that “gundruk” is made out of fermented mustard leaves not from the (mustard seed). They add some tomatoes, ginger, garlic and that’s it. I love it and I’m glad to see you enjoy it. I can just have gundruk and rice with some “dalley” (local chilli) pickle every day and I won’t be bored. 🤧

    19:35 it is not mustard, it's fermented spinach (mostly).
    Wiki - "Gundruk is obtained from the fermentation of leafy vegetables (saag; Nepali: साग). It is served as a side dish with the main meal and is also used as an appetizer. Gundruk is an important source of minerals, particularly during the off-season when the diet consists of mostly starchy tubers and maize, which tend to be low in minerals.[2]"

      @@vivek1236i am not expert but from my experience gundruk in sikkim is mostly made out of saag (palak), they mix other vegetable leaves to enhance taste but major ingredient is always saag.

      @@lakpabhutia3554 sorry sir, I beg to differ being a nepali n a local. The term saag is referred to any leafy vegetable but gundruk is mostly made of two particular saag I.e. Raya ko sag n mula ko saag. As Palak cannot be fermented n dried and its a leafy veg of plains not of hills. No offense just correcting of what I know.

    That soup you tried is was made with fermented mustard leaves got a bit of a sour taste to it, and seeing you pour that fermented soyabean/kinema on your rice must've compromised the flavors of other items in there, so better go slow tasting the curries or any other item one by one as it all comes with it's own specific flavor, later yu can mix it all together or mix and match. That's what we nepalis/indians do 😊. Good going brother. Wish yu all the best.
