From what I could see, all the ones that didn’t have the shoulder feathers, like you mentioned, have the pink flush crest, which is a big indicator of rooster too.
Males wingtips will also be shorter than females. The girls wingtips will go all the way to or even past their butts. I also raise Cochins and this method has been very accurate for me
