I'm so happy I found a recipe without gelatin! It's so hard to find a cheesecake recipe that doesn't include it. Thank you for making this!!

Thank you for your question. The heavy whipping cream is really an important part of this recipe. It allows the cheesecake to properly set. If you wish not to use whipping cream, we'd recommend selecting a different recipe for cheesecake - we have plenty on this channel and on our site - enjoy!

  • @allrecipes

This recipe is calling for either an 8 inch or 10 inch spring-form pan. If you don't have either of these, you could certainly make them in another pan, such as a standard cake pan. Make sure you grease the bottom and sides so your cheesecake won't stick. Give it a try and let us know how you like it!

Thanks for your question, Kuan Colette. For this recipe, we do not recommend substituting milk for the whipping cream. Whipping cream is essential because it gets stiff when beaten, and so the filling thickens when the cheesecake is chilled. Happy baking!

Hi, I wanted to make this, however I have a problem😔. The stores I go to in ireland, they never say cream cheese. Like there are loads of spreadable cream cheese but I don't know which one is cream cheese. It doesn't say. So stones I see it says Philadelphia cream other times it's just light cheese. But I do t know if any of these are actually the same as cream cheese. The only thing closest to cream cheese I know is marscapone, but I'm afraid it won't taste like the cheese cake in the video😔. I really wanna make this for my family. Do you know what other words are used for cream cheese or what cream cheese is also known as?

    • @adamvarghesesatish3337

Thanks for your questions, kristine beryl madayag. You may always use a spoon to mix a filling or batter. If you want it really smooth, use two forks or a whisk. But for this recipe, cream cheese is "a must" to set up the filling in the fridge and make it firm. All-purpose cream won't work, and for most cheesecakes, it needs to be heavy cream combined with cream cheese--that's the "cheese" part of cheesecake. It would be better to wait until you have it to make this recipe. (A search didn't turn up any cheesecake recipes without cream cheese.)

I had left over heavy cream, so I put it in the freezer. I thawed it and used it for this recipe. The mixture never did get as smooth as the one in the vid. I was afraid to beat it until it turned to butter, so I was left with a curdled looking cheese cake. I'm still not sure it's going to set up in the fridge. I guess I didn't shake it up enough to re-distribute any settled butterfat. Good thing I only tried the recipe with half the ingredients...not so much to throw out. I post this in case your visitors can learn something from my stupid mistake.

Hi, Asif iqbal - This is frustrating. We feel your distress! Did you use full-fat cream cheese? This is important. Also, don't over-beat the heavy cream as it can separate. The kitchen temperature might also affect the cream--always work with chilled bowls and be sure the heavy whipping cream is thoroughly chilled too--but it shouldn't affect it that much. If it seems too think, you can blend in another package of softened cream cheese. Also, have you chilled the filling mixture yet? This step helps it set. Hope this helps.

Thanks for your question. The heavy cream in this recipe acts as a binder to hold the cake together once chilled. Therefore, there is no need for gelatin.

Thank you for your question. Can you please clarify what it is you are trying to change in this recipe? The cream cheese is a very important part of this recipe. If you are not a fan of cherry flavor, you can top the cheesecake with your favorite fruit or chocolate ganache. Thank you!

Thanks for your question. You can use a sturdy wire whisk and a bit of elbow grease :)

Thank you for your question, Chiza. We would recommend using an 8 or a 10 ten inch springform pan for baking the cheesecake. If you would like to add the color, you can use food coloring in the batter. Happy cooking!

Good question. You could try using half and half, but the heavy cream really adds richness to this dessert and also helps it to set up. Enjoy!

Thanks for your question. Would you like to replace an ingredient with sour cream or use it in addition?
