There was actually very little added to this movie as part of the special editions. That is a true testament to how perfect the originals versions were. They fixed some of the color matting issues for the Hoth battle but they didn't introduce any new cgi scenes for that battle.
The biggest things added in were on cloud city when they fly into bespin for the first time. Scenery was added to make bespin feel even bigger and more alive than the original. They also added virtual windows in the hallways of cloud city. The worst thing that Lucas added in was Luke yelling "noooooo" as he fell down the core. You will soon find out that Lucas has this weird obsession with Luke and Vader yelling "noooooo" that he just had to add in.

It had seating for 800 including a balcony section and a huge curved screen that required three synchronized projectors. For all three movies, the line wrapped all the way around this huge building.
My dad took my sister (8) and I (11) to see Empire. It was so packed that we couldn't find three seats together and had to sit separately. I've never seen a theater with that many people in it all at once before.
The best movie watching should be a communal experience. Seeing the _Star Wars_ films in the Cooper was an amazing experience that unfortunately will never be repeated. The scenes where Luke is struggling to walk in the blizzard really happened, The film crew were snowed in due to the blizzard so the director didn't want to lose any filming day. He forced Mark Hamill out the back door of the hotel and the film crew filmed from the open door and warmth, while Hamill suffered. If you notice near the end, when the Millennium Falcon jumped to light speed to escape, you'll see Admiral Piett's reaction, as he became afraid, because he was responsible for deactivating the hyperdrive. About the pronunciation of Han, think of it as different accents in different parts of the world, just think of how British and how Americans speak English; the same principle applies with the Galaxy, they have different accents even for the standard Galactic language spoken throughout different systems and because of Lando's accent, he pronounces Han in a different way, meaning the other one is the standard pronunciation and Lando's is more of a localized way of saying it, particular to his planet's speech/accent.

You can jump start a car with a manual transmission if you can get the car moving first. Easiest ways to do that? Have someone else push the car. So Leia's sass is about getting out to push the non starting Falcon to jump start it like a car.
It was a trick most people knew at the time since automatics were rarer instead of the norm. Heck you can even see the trick in action at the begging of the original Karate Kid th-cam.com/video/nK1xslvKteE/w-d-xo.html

The AT-AT attack (the big mechanical walkers) scene is pretty much exactly as we saw it in 1980, so you can imagine how our minds were blown! They did clean up the inside pilot area of the snow speeders that fly around them though: Originally the effect used to have the walkers in the background had a tiny side effect that the outside could be seen through the window pillars. This was fixed for the special edition. I believe _The Empire Strikes Back_ looks the most like its original compared to _A New Hope_ and _Return of the Jedi._ I think it had the fewest "additions" and changes made to it.
After you watch _Return of the Jedi_ I _HIGHLY_ recommend the behind the scenes of the making of this whole trilogy called "Empire of Dreams". It is on Disney+ and has also been released as extra content on various DVD and Blu-Ray rereleases. You can probably also find it on TH-cam. In terms of CGI enhancements, The Empire Strikes Back has the least. Barring a visual update to the Emperor during the hologram scene, everything is pretty identical to the original source material. So this "bonkers" imperial walkers looked just as good back in the day. They were done using stop motion, and there's a really great breakdown video of the special effects involved somewhere on youtube. If I remember the digital changes in this movie are
-full screen shot of the Wampa snow monster. It was just a puppet before.
    - digital addition of windows in cloud city
    - replayed the other actor as the Emperor to be Ian McDiarmid who plays him in the other films
    - some of the effects in the snowspeeder fight had slight transparency issues (you could see through the effects if you looked very closely)
This is the film that got tampered with the least when Lucas re-released these. None of these changes are unnecessary though which is debatable for the other two films.

Ironically enough, the worst special effects in the Star Wars OT were the ones that were added in the special edition, decades later. The original stop motion was on-point, and the puppets were from Jim Henson's crew (including Frank Oz for Yoda's voice), which is why they fit so well. It was the '90s computer effects that stood out because light-matching technologies of the time weren't up to snuff.

@@jenmurrayxo Disney may go for that cash grab if all else fails with their ownership of the franchise, but they won't be able to re-enlist George Lucas' help in leading that charge because he's kind of over it. There have been a few fan edits of the films, mostly aimed at "de-specializing" the OT**, but some editors are also special effects artists themselves. Someone who goes by the handle "Adywan" has de-specialized the first two movies (third is still in process), and he added his own modern effects where he felt it fit the story or fixed plot holes (e.g. he built his own wampa and ice cave to fix continuity errors with the creature's horns, iirc). Fan edits are difficult to acquire, though, because they have to deter distribution to prevent legal accusations that they're cutting into the copyright owner's (aka Disney's) profits.
** If you're not familiar with the "Han shot first" controversy, this was another impetus to de-specialize the movies: In the theatrical release of the first Star Wars, Han Solo was cornered by the green guy with a gun (a bounty hunter named Greedo) in the cantina on Tatooine. Han preemptively shoots Greedo under the table to avoid being captured, and then calmly walks away, establishing him as "not a great guy". This sets up his character arc of learning to think of someone other than himself when he saves Luke at the end of the movie. When George Lucas released the special edition, though, he clumsily (digitally) moved Han's head in response to Greedo shooting first, meaning Han was just defending himself. OT fans felt this diminished his overall character arc and they didn't like the update. Lucas later released another version where they shot at the same time, but this wasn't really an improvement because it didn't address the original criticism.

Fun fact about Luke's scars after being walloped by the Wampa (i.e. the abominable snowman, as you described it): it was from a legitimate injury. See, shortly after _A New Hope_ had released, Mark Hamill was in a car accident. This made for a convenient way to depict Luke as being injured from his encounter. It worked well for the character because Mark Hamill would fully heal by the next film, and the change to his facial structure would end up making Luke look more mature.
As far as I'm concerned, this film was the _only_ one that needed an overhaul from its 1980 debut. OG Emperor on the message looks almost like moldy pizza.

When it came out, cliffhangers weren’t common for movies (classic in tv shows, but not movies). Audiences were shocked to get out of the movie without having resolution.
The whole trilogy was groundbreaking for the times while relying heavily on true and tested tropes (young boy getting a destiny call to because a knight for good, the evil dark knight, the wise man disguised as a fool to test the young hero, etc). Empire Strikes Back is the least ‘enhanced’ of the original trilogy. Very little was done. They touched up some highlights on certain explosions & filled in some extra buildings on the sky city & brightened up the color. Otherwise, the film is essentially what came out back then.

Star Wars is brilliant because it follows the timeless "Hero's Journey" that nearly all myths and legends are based on and everybody is familiar with, but at the same time it bucks every trend and leaves the viewer in constant suspense and wonder. Empire Strikes Back in particular is the very personification of that. The evil side wins, there is no happy ending, the hero loses his hand, the bad boy gets the girl, the bounty hunter actually collects his prize and the wise old wizard is a 2 foot tall green creature with pointy ears. Then you have possibly the most shocking moment in the history of cinema and groundbreaking special effects on top of that. It's easy to see why this one of the best sequels ever made.
Speaking of special effects, CGI didn't really exist when the first three movies were made, at least not in the way that we think of it. There were some very simple computer generated graphics in the original trilogy but 99% of the effects were practical, meaning real ship models, real sets, puppetry, stop-motion, makeup, prosthetics, real explosions etc... anything you see in the first three movies that is obviously CGI was added later. Empire had the least amount of additions of the three, the Imperial Walkers for example were completely real models using stop motion and other effects.
CGI in the way we think of it today was really revolutionized by funnily enough, Lucasfilm. Specifically it's visual effects department ILM or "Industrial Light & Magic" which Lucas started in 1975. ILM was responsible for many CG milestones including the first fully computer generated character, the first partially computer generated character (Terminator 2), the first time the texture of human skin was computer generated, the first computer generated detailed living creature (Jurassic Park) and the first computer generated photo-realistic hair and fur (Jumanji).
A couple other cool facts about Lucasfilm: Pixar actually began as part of Lucasfilm's computer division before it broke off and became it's own company and eventually sold to Steve Jobs. Pixar would end up creating the first completely computer generated movie (Toy Story). Also, Photoshop was originally created by ILM's visual effects supervisor John Knoll as a summer project and Lucasfilm was the first to ever use it as an image-processing program. Although he sold it to Adobe, John Knoll continues to work for both Adobe and ILM to this day.

If memory serves me right only Darth Vaders actor has the script with the actual line. Everyone else’s script said something like “I Killed your farther.” So marks reaction was more genuine of a surprise when he heard it. There were people on set who didn’t know that it was coming, it literally surprised everyone! Like the actor and Lucas I believe were the only ones who knew, the director I think knew as well so as to not call cut. So that surprised reaction was captured on film.

While they were all buddies and together for that great ceremony where Chewie didn't get a medal, 3 years have passed, as did 3 years between movies, so they've done all sorts of stuff we don't see or hear about, and we get dropped back into the middle of the action.
Shortly before filming began on episode 5 Mark Hammill allegedly had a motor vehicle accident and they apparently needed to explain why his face looked the way it did when he was healing, hence the Wampa attack. The AT-ATs (All Terrain Assault Transports) are stop motion and we're basically unchanged in the enhanced versions. Yoda was all puppet in the 1983 version, only slightly touched up in the enhanced version. The majority of the enhanced CGI was very subtle in this enhanced version, mainly refining and enhancing the original effects.
The origin of Darth Vader and why he looks the way he does is explained in Episode III, but watching the episodes in numerical order COMPLETELY spoils one of the GREATEST plot twists in cinematic history on this episode, so I'm REALLY gals you're watching them in release order...

There was one scene left out of the movie (but you can see part of it if you can find an old trailer): The rebels have one of those giant Wampa creatures sealed in a room on the base on Hoth. There's a large yellow and red sign on the door that reads "Keep Out" in Imperial script. As Han and Leia are running from stormtroopers to get to the Millennium Falcon, C-3PO stops and tears the sign off the door. The stormtroopers round the corner and see the door and say, "maybe they went in here!" and go through the door... only to get attacked by the now loose and raging Wampa. I wish they had left the scene in, it would have been funny.
