The last remodel happened in the early 80's. Were you there then or was this prior to your presence and tenure? Any Idea on where to get documentation for this facility?
I believe what you dug out is called a spring house. When goats and /or cows were milked, the fresh milk was placed in cans at the bottom of said spring house to keep cool until pick-up time or time for the nuns to process into butter, cheese etc. I had two spring houses on my property in Ohio many years ago. Just a simple refrigerator from days gone by! Crack On!

If I remember, that entrance hall floor was one of the first big changes. Removing the tiles and several inches of cement before revealing the original stone floor was just wonderful!
The student has learned well from his master. Yannis has become a master plasterer and looks like he really enjoys his craft. What a team you have there, Billy! ❤
Billy, you and your family/group are great, but what keeps me here is the craftsmanship of the work. No shortcuts taken. That hallway will be on par with the kitchen, which is amazing.

It wouldn't be a small cistern to supply water to the greenhouse ? It makes sense that it used the old well farther out in the garden and piped it there for easier watering of the seedlings .Not as far to carry heavy buckets .Then after the city or village , piped water in they simply stopped using it and filled it in to protect someone falling into the hole .
Billy that is a cistern. To collect rain water by those drains. As it fills up you walk down the stairs to the changing level of the water. Water is taken from the cistern to water the plants in the greenhouse.

Yanis looks so masterful in that close up of him plastering the entry. And it’s a clever counter balance to the notion that he’s next to go into the soggy well. 🤣 I guess until there’s a younger apprentice on the team he’ll get most of the dirty work.😊

Ive used a hard surface floor cleaner for years. One pass releases clean water and brushes rotate and in the reverse pass the dirty water is vacuumed up. Hoover makes them, probably Bissel too.

The stone floor looks fabulous! As for the "well" in the garden ... do you have a pump you can use to get all the water out? Then Rick or Yanis or whoever would have an easier time clearing out the remaining muck.
How are you going to deal with the gap bottom of the doors please? I was shown that floors are mopped in a figure of eight, apparently more of the floor gets covered.Who knew....not me lol. It looks and sounds fabulous Billy, Yanis and of course, not to forget Simon 🤪🤗🇬🇧.

I think that’s an ingenious rain catchment system. It has stairs down to it for when it’s low, but can fill all the way up. They would’ve filled watering cans there next to the greenhouse. You’ll know if it’s spring fed, like the one down further bc it’ll be cleaner coming in. Remember that concrete lid you found in the garden a while back? I wonder if it’s all connected.

It’s amazing how quickly Yanis has picked up plastering with all of Simon’s tips along the way. His skills are remarkable from when he first began.

It isn’t a very big cistern. The one we had was 20 feet deep and about 15 x 15 feet.

As someone who has done a fair bit if sheet rocking, use a strong light across the surface to bring to light any problems.
