Critical Eats Japan sorry to tell you, but once you make this sauce there isn’t any left overs! 555! It’s so good! I personally like the fresh crunch of the herbs when using it as a dipping sauce.
Hi Paul. I like it either way. The Cameraman only likes it fresh as he says the fish sauce becomes more predominant and too strong after sitting for a day or two.
i used pandaroo’s tamarind paste 1cup like ur recipe but my whole sauce was thicker than yours and sweeter so i did add the other ingredients more. but like from the start the paste mix with juice mine looked a lot thicker. what am i doing wrong sis

I think after you toast/roast the rice you have to ground it.

Just toast the raw rice seeds in a pan (no oil) until light brown, then blend until it becomes a powder

Make your own. It's easy. Take whole uncooked rice and toast it on the stove. Then crush with pestle and mortar or other tool.
