For your super long/thin rockets, you can right click on parts and autostrut them. This essentially fixes them relative to each other, stopping the flaccidity. The option may only appear if you allow for 'advanced tweakables' in the options menu.

Today I built a twin fuselage small carrier plane that is launched by a wheeled rocket-powered launcher. This launcher works, but the top mounted rocket in the middle of the center airfoil does not really harmonize with the small carrier plane. Pushes it upwards and things get uncontrollable. But I built a greach launing system that keep everything on the runway and did not even require any redesigns. I just improvised it to my build.

Control node is at one end, controlled bits on the other end.
... put a probe core near the thrust end, and use that to control with.
It will go up more reliable, but it will wobble all over as it is not structurally stabilized.

Protip: If you want to build big, use less, larger fuel tanks (pretty sure there's one twice the length of the ones on the noodle) and brace it with struts on the lower stages to keep it rigid if needed. KSP very much fits the real world 'simple is reliable' aspect.

Sorry for the negitive(ish) comment, but PLEASE watch a tutorial!!!! If you learn just a few basic options that exist in KSP, you could make nearly all of what you've been trying to make work! I love your channel but I find this video hard to watch due to all of the fairly simple solutions being missed. So, just please watch a tutorial or something! I look forward to what you'll make in the future (that hopefully doesn't immediately explode on launch!)

Pretty sure those vernor rcs thrusters are for space as fins don’t work without an atmosphere. I’m sure you could get it to work using fins instead running the length of the fuel pods... I don’t know if the game mechanics would support that theory or not lol. Anyway, enjoyable as always!

You should check out Prison Architect and possibly Airport CEO. I think they're right up your ally and it would be a great way for you to live out that childhood dream of being an architect while also roasting architects. Besides who else is going to make a prison in the shape of a knob.
