Your New Favorite Fettuccine Alfredo with Chicken

  • Forget everything you know about Chicken Fettuccine Alfredo. In todays episode I share a recipe I have been developing for the last year. My fiance loves this dish and I try to make it once a month.
    Here's the rundown for how I made this dish in the video.
    Boil Enough Pasta for 2 People - Boil time dependent on Pasta Brand
    Cut a chicken breast in half and season both sides with
    - Salt
    - Pepper
    -Garlic Powder
    -Cook chicken thoroughly til it reaches an internal temperature of 165 F ( 74 C )
    To a pan add
    3 Tbsp - Butter
    1/2 - Onion ( yellow or white )
    2 tsp - Garlic ( minced )
    2 1/2 - 3 cups - Heavy Cream
    1/2 cup - Grated Parmesan
    2 1/2 cup - Shredded Parmesan
    1-2 tsp - Oregano
    1 tsp - Pepper
    Salt to Taste
    Large Pinch of Fresh Chopped Italian Parsley
    Add pasta to sauce and coat noodles, Add noodles to plate or bowl
    Lay chicken breast on top
    Finish with fresh cut Tomatoes and Fresh Parsley

    Anytime I use parm, it makes a huge glob. No bueno.

      That can happen sometimes if I add it all at once. I usually try to stagger it and give it a chance to melt down.
