Today's recipe is different style scrambled eggs with potatoes and veggies. Fried potatoes cooked home style with onion and peppers and mixed with scrambled eggs. Do try on weekday as well as weekend for breakfast. This can also be taken as is.
Ingredients:
Eggs - 2
Potato - 1 medium
Onion - half medium
Bell Pepper - half pepper
Salt - to taste
Oil - 1 tbsp
Black Pepper - to taste
Coriander - as per taste (1 or 2 tbsp)
Optional -
2 slices of bread
Butter to toast the bread
Method -
Heat 1 tbsp oil on a pan
Add the diced potatoes
Sprinkle with salt
Cover and cook until 80% done on medium heat
Now add diced onion and capsicum
Sauté for a min (don't overcook) , keep them crunchy
Season with salt and pepper
Beat 2 eggs in between and keep ready
When the veggies are almost done, add the eggs
Gently fry and mix
Sprinkle with coriander leaves and switch off the flame
Top with fav hot sauce
Optional -
Toast slices of bread, apply butter
