    Loved this comparison! The eggs may change and allow more fudgyness ? They say allowing it to sit for so long allows for a more fudge like brownie and develops more gluten but that sitting it for1-2hours is the same effect. Who knows!

      Thanks i agree! That was also my conclusion however my mix and bake brownie was literally exactly the same as the 100 hour!! 🤣😂🤣🤷🏻‍♀️

      I have made my own vanilla in the past using vanilla beans and vodka I let it sit for six months to mature it was wonderful And in my opinion much better because it had all of those amazing vanilla Bean specs in it not like the stuff you buy off-the-shelf

    Gretchen!! I am a MASSIVE fan & a vegan Pastry Chef in Western Mass.....question: I have Droste cocoa right now, which is Dutch-processed, can I use it in your 1-Hour Brownie recipe??? I notice that your recipe calls for natural cocoa.....I know there are adjustments to make if I swap cocoa, but I can't remember what they are!!! YOU ARE A ROCK STAR!!!!     I don't think I'll ever make the 100h brownie 😂 When I'm craving brownie 100 hours sounds way too long to wait 😂😂😂

    Gretchen one thing I did notice about the brownies is when you took the still shot of them cut, your regular one hour brownie looked more fluffy as the hundred hour brownie looked more dense if you noticed, but as you said the texture and taste was the same. But what I really think youhad got at was right I think sitting in the refrigerator the flower absorbs more of the liquid that could be why it was so dense. But truth when I saw you spreading out that brownie batter with those crumbles of chocolate oh my gosh look so good! I hope you're doing well I hope everything's going well in Florida for you and everything. ❤️🙂

      Yes! Agree to all that! I really though there was going to be a big difference, since especially when I cut them, the 1 hour one was slightly more crumbly, but on tasting them they were like exactly the same! LOL
      I think I would probably let the batter sit in the fridge overnight- but 3 days..... umm, nah.

      I noticed the difference in height too. I wonder if the leavening agents lost some of their power sitting so long, and that lead to a "shorter" brownie?

    I don’t know about your brownie here but your Fudge Brownie-in your AWEsome cookbook-is ABSOLUTE F🔥RE!!!!!

    I swear, I believe tha’ batter alone would be worth drinking over some dang ice cubes!!!

    Chewy, thick…MOIST…somewhat dense. Gurrrrl. That thang is a killa’.
    I followed you ‘back when’ so I already knew how your supremacy in baking so, when you dropped that Vegan Cookbook-I did not hesitate. I use your brownie and recipe ONLY-for my Pastor.
    Due to debilitating Gout outbreaks he was experiencing he has been on a PBD for about 6 years now and Brownies-is his weakness. I have tried most every vegan Brownie out there. Some were decent but I don’t settle for DECENT.
    I want GREAT when I bake ANYTHING.
    It wasn’t until I purchased your book, made that one for him, that he pulled me to tha’ aside and said, “that was the BEST brownie he had ever eaten”. That’s even over non-vegan ‘G’!
    He had back in his eyes👉🏽the best little twinkle & a smile to match because he had to give up a lot of sweets and he is a CHOCOHOLIC.
    I am a WELL-seasoned baker. I stock my pantry with proper essentials for all baking types including gluten and Vegan ingredients.
    I research them-so while there were ‘some’ vegan cakes he liked, he really wasn’t excited about sweets anymore.
    No brownies. He missed his ‘fix’.
    His wife even told me she was NOT letting him get away without sharing that box of love with her. Even she loves them.
    That…THAT…could quite possibly be the BEST VEGAN Brownie IN…THE…WORLD ‘G’.
    In tha’…..🌎!
    Sorry for tha’ long words but you deserved all them kudos and 👏🏽.

    I’ve watched your videos for so long I had no clue you were vegan and still making the other kind of videos for a few years (still think that was crazy) while I’m not vegan or vegetarian I still watch and support you and I got two sisters that are vegan, I love cooking for my family both vegan and non vegan alike. It’s my way of keeping my family together, even my grandma would make some weird food for my sisters. I don’t think I could be vegan or vegetarian. I feel like I would loose too much of my own cultural identity.

      Hey thanks!! Yes I have been 100% vegan for almost 5 years I was vegetarian since 2009 And finally made the jump off the fence to full vegan in 2016.

    I believe Alvin let his brownies cool in the freezer than fridge before cutting. Maybe I’m wrong. Could that impact taste?

      He baked his after 3 days, then immediately put them in the freezer for 30 minutes, and then the fridge for 24 hours before cutting. I've used the freezer method on brownies and it absolutely changes the crumb.

    Gretchen, this is off topic, but, if you’re going to do any Christmas cookie videos, will you consider doing pfeffernusse cookies? I loved them as a kid, it I haven’t seen them in markets for a very long time. It’s the season for the ginger, anise, cinnamon combo, so will you please veganize these cookies?

      I am so behind with any kind of Christmas anything right now.. I can't believe Christmas is next week!!

    I am always sceptical of people who make up obscure rules for cooking. Don't mix solids and liquids, stir your tomatoes only with wooden spoons, let your bread rise and hour than pound all the air and do it again, etc. In my experience all of these types rules are non-sense. I don't see waiting 100 hours to bake a brownie catching on though. :)
