The Rice Congee Recipe to Warm Your Soul 稀飯

  • Rice Congee! The perfect Chinese dish for the cold weather.
    This dish always comes out in the winter as it should! It's so comforting and delicious, also very simple to make. Now I'm showing you the two ways to make this and you can use this to create any sort of congee you'd like! A very basic recipe to allow you to adapt into whatever you want!
    Recipe (10 Servings):
    - Medium-Grain Rice (1 cup)
    - Water (10 cups)
    - Vegetable Oil (a splash)
    - Ginger (7 thin slices)
    - Pork (1/4 pound)
    - Scallions (2 stalks)
    - Fried Dough Stick (as needed)
    - Century Egg (2 eggs)
    - Pork Floss (as needed)
    - Chinese Pickled Cucumber (as needed)
    - Salt, White Pepper, Chicken Powder (1/2 tsp each)
    1. Wash and rinse rice, then soak in 3 cups of water and some vegetable oil for 30 minutes-1 hour.
    Prep ingredients by thinly slicing ginger into strands as well as the pork meat. Dice the scallions and cut century eggs into 12 pieces each.
    Cut Fried dough stick into small pieces and bake on medium heat until crispy.
    2. Pour in the rest of water (7 cups) into the bowl and transfer to stove. High heat while stirring occasionally until it starts to boil, then reduce to a medium-low heat. Continue to cook until the mixture becomes thick and rice has throughly absorbed water. About 12-15 minutes.
    *At this point, basic rice congee is complete, you can eat this as is, or add any toppings you wish. I like to use pork floss, an over-easy egg and some Chinese pickles. Continue to step 3 for a traditional, more complete version.*
    3. To make the traditional version of rice congee, once your congee has cooked, throw in the ginger and pork, and cook on a medium heat for 3-4 minutes. Add in the spices as well as any ingredients you want.
    4. Serve with any toppings you wish to put on top.

    I love jook! Mine always seems a tiny bit bland--I don't eat meat and I can never get the broth as flavorful as I want. My dad would like that first version you made.
