How To Prepare A Full HOT POT FEAST From Scratch

    Herbal Broth
    - Pork or Chicken Bones (2 pounds)
    - Ginger (1 medium piece)
    - Scallions (2 stalks)
    - Celery (2 stalks)
    - Bay Leaves (6 leaves)
    - Water (4 qts)
    - Dried Goji berry (handful)
    - Dried Red Dates (5 pieces)
    - Sake (as needed)
    1. Roughly chop ginger, scallions and celery. Parboil bones for 5 minutes then rinse, throw back into a clean pot, add the aromatics and water. Bring up to a boil and let simmer for 2 hours. Skim any fat off the top if needed.
    2. Strain out all ingredients from broth and put filtered broth back into pot, throw in goji berry, dates and sake. Leave on a simmer, this broth is ready to use or store.
    Mala Chili Broth
    (* for ingredients that are necessary if making from scratch)
    (** for ingredients that are also necessary and can be added to pre-made packages in lesser amounts)
    - Chinese Pepper Flakes** (3-4 tbl)
    - Spicy Doubanjiang** (1/4 cup)
    - Sichuan Chili Powder** (3-4 tbl)
    - Bay Leaves** (5 leaves)
    - Green Sichuan Peppercorn** (2 tbl+)
    - Garlic** (7 cloves)
    - Star Anise* (6 pieces)
    - Cloves* (15 pieces)
    - Fennel Seeds* (2 tbl)
    - Black Cardamom* (4 pieces) crack with knife
    - Cinnamon* (1 stick)
    - Dry Sichuan Chili* (2 handfuls)
    - Dry Lantern Chili* (handful)
    - Fermented Black Bean* (Handful)
    - Cardamom (15 pieces)
    - Dry Sand Ginger (handful)
    - Licorice Slice (handful)
    - Garlic Chili Sauce (1.5 tbl)
    - Beef Bone Broth (10-12 cups)
    - Oil (3 cups)
    You can use a pre-made spicy broth and choose to add any ingredients as needed, just cook in stove and filter after 30 minutes of simmering.
    1. Mix all ingredients into a bowl to prepare it. Heat oil in a large pot until small bubbles form. Carefully put in the ingredients and stir constantly. Leave on a med-high heat for 5 minutes then reduce to a low heat for 30 minutes, stir occasionally.
    2. Pour in Beef broth carefully and bring up to a boil then simmer for 30 min - 1 hour. You can add more broth if needed (for more quantity or to de-saturate the flavor)
    3. Strain out all ingredients from broth and put filtered broth back into pot. Leave on a simmer, this broth is ready to use or store. You can also add a pinch of sugar and chicken powder to treat flavor.
    This can be stored and frozen for a long time, just let defrost before using.
    Bao Bei Hot Pot Sauce
    (* ingredients are an absolute)
    - Scallions* (2 stalks)
    - Garlic* (6 cloves)
    - Ginger* (1 tsp)
    - Bullhead BBQ Sauce* (4 scoops)
    - Peanut butter* (2 scoops)
    - Rice Vinegar* (a splash)
    - Soy Paste* (3 tbl)
    - Soy Sauce* (2 tbl)
    - Sesame Oil* (2 tbl)
    - Scotch or whiskey (a splash)
    - Fermented Bean curd (2 pieces)
    - Spicy Doubanjiang (1 tbl)
    - Mirin (a splash)
    - Cilantro (as needed)
    - Sugar (small pinch)
    1. Finely mince scallions, garlic and ginger. Mix all ingredients together, wait until it's combined to add chopped cilantro then finally the sesame oil.
    Key Notes:
    -Hot Pot Items are all as needed and you can choose whatever you want. I suggest a good assortment of root vegetables, vegetables, sliced meats, fish balls, fish cakes, rice cakes, tofu, pork liver and intestines.
    -Make sure you watch the video if you're interested in the techniques used to prepare some of these items.
    -I always cook some items in the pots of broth PRIOR to transferring to a hot pot, as this will allow you to have a full pot ready to eat, instead of waiting for everything to heat up at the dinner table. Throw in the root vegetables, let that cook for 10-15 min then throw in an assortment of tofu, fish cakes. Don't pre-cook any meats as these cook very fast.

    KEY NOTE: When putting spices in hot oil, let it cook for 5-7 minutes on a medium high heat, and control the heat. DON"T LET IT BURNNNNNN
    (in the video I said high heat for 10 minutes which is way too easy to burn without proper guidance, sorry for the mistake >.

    I was very surprised that you didn't sear the beef for a bit before adding it to the water, but that you parboiled. Is that typical? Is there a reason you wouldn't want to sear the beef beforehand?

      I'm assuming you're talking about making beef bone broth which I did not do in this video. What I added in the water was simply Pork Bones which had almost 0 remaining meat and searing is not ideal. When I do make my own beef broth, I do bake or seer the beef which gives it an incredible flavor! But you must have gotten mixed up, as the pork bones I used was simply for a light herbal broth.
