Easy recipe for French baguettes (no knead) & our life in a heatwave

    In this video I am sharing my super easy recipe for French baguettes! You'll be surprised how easy it is! And it's no knead!
    I never understood why French baguettes can't be found anywhere else (it seems) in Europe, and when I did find them in The Netherlands they taste NOTHING like the real thing. And the recipe is sooooo easy!
    Anyway, you'll just have to try this is you love baguettes as much as I do!
    I am also sharing another few of our daily routines here. Hope you'll like this one!

    I like your recipes and your outdoor kitchen. This style seems very European. In the U.S. we generally prepare everything indoors even if we cook it outdoors on the grill.

      Usually in villages are separete from the house so called „Sommer-kitchens”. In the heat days we are doing every cookings, backings in it, so the rooms in the house remaine cool. I mean in Romania, Hungary, Europe. 🙂

      @@fodorvarad1 Yes that is also why I cook outside, although our house always stays cool. We've been in a heat wave for nearly a month and our house and bedrooms are still nice and cool, fortunately! It is one of the advantages of living in a properly built stone house!

    Hey Marloes, I commented about how I had no success with your baguettes recipe. Well, today I had great success! Here in Australia we have something called “plain flour” which is like all purpose flour and would generally be used for making bread dough. I tried today with 00 flour, which is finer and the baguettes were fantastic! I also have two ovens, one large and one normal size. I used the smaller of the two and the baguettes baked in the 15 minutes you suggested. I am a very happy baker today. I’m sure if any other Australians read this they will be happy to know this, because our flour is so different from what you have in France.

      Oh that is great news! Yes I know of type 00 flour being very suited for baking these kinds of breads. I don’t know that typology though as we don’t have it here in France and I thought that was an Italian thing (tipo). Anyway this is great to hear and also good to know in case more people ask me that question. Happy baking!

    If it’s really cold I often use my “solar microwave”. I put the dough in the car. Even if it’s nit sunny the closed car is warm!

    My baguettes came out great! Was worried as my dough didn’t look as wet as yours, but forged on and really surprised how nice they turned out, so thanks for sharing your method. My wife and I love your videos, especially your cooking, the super cute cat, and walking thru the country with the sounds of nature. Oh yea my wife loves all the brocante stuff too!

    I am going to try the bread recipe. I don't have a cooking scale so I am going to try using American measures in cups since I live in NY. I am going to just try and get that consistency with my dough. I really enjoy your channel. It is a lovely way of life. I just love seeing all the beautiful stone buildings in the villages,and cities.

    This is such a lovely video! Calming and peaceful. I will definitely try the baguette recipe as it is a tad different from mine (Julia Child’s). Agree that water in the oven is a must. I also enjoy using spelt flour. No question but that it makes, somehow or other, a better crumb. It makes plain soda bread more interesting too. * I enjoy all of your videos… Thank you!

    Fantastic eye for making videos. Olav may not stack firewood very well but the kitchen looks great, even the stucco and the tile lay out which I think he had a lot of fun with😏.

    Thanks for sharing your baguette recipe. I’d like to know your pizza dough recipe, too. I live in Arizona, USA, and last week it was 42 degrees Celsius. I wish I had a nice stone house-our central air conditioning ran just about all day. Thanks for sharing this look into your beautiful home life.

      Fortunately we don't need airconditioning in our house as it stays very cool naturally. A blessing in this heatwave!
      My pizza dough recipe is very simple: 500gr wholemeal spelt flower, 7gr dry yeast, 300ml lukewarm water, 1 teaspoon of coconut sugar, 1 teaspoon salt 2 tablespoons olive oil. Mix, leave for about an hour and then make your pizza's! This makes 4.

    Do you use the stinging nettle for tea, in food dishes, or in any way for its medicinal properties? I have loaf pans like yours but won't be making bread until the weather cools. I think I see what I've been doing wrong for baguettes -- messing with the dough too much and probably adding too much flour when I turn it out. Thanks!

    Did you let the dough rise for a second time? I haven’t had much success with this recipe. It’s very solid bread.

      Also, my very modern oven, fan forced at 250 degrees Celsius, took more like 30 minutes than 15 like you suggested.

      I’m sorry to hear it didn’t turn out as you had hoped. Which country are you in? Someone commented earlier saying some types of flour in the US are different and may not allow you to get good results but I wouldn’t be able to tell you how to change that.
      The dough should be very runny and a single rise should be enough. The temperature of your home might be a cause. If it’s too cold the dough would need longer to rise but if it’s too warm it will damage the yeast.
      As for the oven: all ovens are different and at this high temperature some normal ovens have difficulty and need longer baking times. Baking bread is all about getting to know your home and how it impacts the proofing and your oven and playing with different elements before you get it just right. I hope you feel motivated to try again! Also try bread flour instead of all purpose, an organic one will hopefully give better results?

      Thanks. Yes, I realise the our flour will be a problem. Even a French baker, hired by a food shop here, could not produce anything near the quality of an actual French baguette. I’ll keep experimenting with different flours. The baguette is. Ice and crusty with longer baking, but it’s just heavy. This will nit stop me!
