Cold Eggs vs Room Temp - Does It Really Matter When Baking?

  • Often in baking recipes, we are told to use "room temperature" eggs. Up until this point, I've never bothered. Does it really make a difference, either in terms of texture or taste? That's what I'm going to find out in this video.
    Also, I realize that the eggs shown in the thumbnail are not the ones I used in this video. I just liked that the colors made for a good "cold vs room temp" look.

    Here's an article on why eggs are refrigerated (at least commercial eggs here in The States):

    What this article doesn't discuss is that if you have freshly laid eggs (like from your own hens), there is a protective coating called "the bloom" that seals all the little pores in the egg shell. This is washed off in the commercial egg process. So if you have hens, there's really no reason why you need to refrigerate them.

      Yes, after struggling with getting my eggs room temp soon enough that I still felt like baking, I started buying unwashed eggs from the farmer's market. Helps with having more room in the fridge too!

      Interesting! I live in Oregon and we hardly ever put our eggs in the fridge with the exception of high temp summers. We have a number of farms with fresh eggs for sale, though.

      Oh, please, don't hit the edge of a glass container with metal or other hard item. I think of the tiny glass shards that can chip off and be ingested with the food. 😳😬

      I just recently watched something about the difference between UK eggs and US eggs. Two different ways to prevent salmonella which are both fairly effective but IMO, I would love to have the benefit of room temp eggs like they have in the UK.

    For years whenever I have needed a room temperature egg, I put the egg(s) in a vessel of warm water for a few minutes. That brings the egg up to room temp pretty quickly and you don’t have to wait a half an hour or more. Glad to see a video on this. The difference is extraordinary especially in cakes where the volume and density are truly measurable.

    Since my eggs come from my "backyard girls" they never go in the fridge. And some are more than room temp when I have to push the hen off the box, it's really warm. I did an experiment of putting fresh eggs into the fridge and then bringing them back out to room temp to use them. Even then I found a difference between an egg that had been refrigerated and one that had NeVER been refrigerated. Yep, the never refrigerated egg was better. If you weren't so far, or I could ship, I'd send you some that had never been refrigerated, to try yourself. Love your experiment/comparison posts. Keep up the excellent videos.

      I get mine from my hens too, but I'm so used to refrigerated eggs all my life I mentally can't keep them out of the fridge! I want to try them out of the fridge now though!

      They really react to temps. One time I bought pasteurized eggs to make chocolate mousse. The whites were very thick out of the shell and took forever to get them to stiff peaks. Science in the kitchen is fascinating 😁

      @@jcgetz84 We have chicks now but they aren't of laying egg age yet and we get eggs from a friend who doesn't wash them or refrigerate them for us so we can keep them on the counter and I absolutely hate refrigerated eggs now. Once you get used to them being on the counter you'll love it.

    Ah . Also I find room temperature eggs essential in baking, mainly as cold eggs can re-solidify softened butter and cause that nasty curdled look to cake (etc) batters.

    If you forget to get your eggs out before starting, just put them in a pan of warm, not hot, water for about 5 minutes

    Interesting. My prediction was there would be a slight difference. I didn't expect it to be such a large difference.
    I practically never let my eggs go to room temp. Who knows what I have been missing.

      To mimic room temp put eggs in hot tap water for about 10 minutes.

      By the time I decide what to fix, I don’t want to take more time to let the eggs get to room temperature. I guess as long as I don’t know what the difference is, then it’s not bothering me to use them while they’re still cold.

      @@melinphx1 I definitely agree with that. Somehow I seem to not know I am making eggs until minutes before I start making them. Someone else responded to my comment with a suggestion of putting them in tap water for 10 minutes. I might try that ... but sometimes it might be more like 5 minutes.

    I've just seen a baking video where she showed what happens to a cake batter with cold.eggs. Evidently, room temperature eggs emulsify better with other ingredients. Her cake that had cold eggs didn't bake right.
    A shortcut is to place your eggs in a bowl of warm water for 10 minutes if you forgot to take them out to warm up.

    I have noticed myself when making cupcakes muffins and pancakes Room temperature eggs do give more loft this is for cooking for my grand kids grand kids

    I would have never thought that the temperature of an egg would make a difference. But I've been cooking for a while and Using the eggs at Room temperature. It does make a difference. Thanks Steve for the confirmation that I need to plan ahead so my eggs are at room temp.

    Wonderful experiment re eggs. I get mine store bought and yeah the store does refrigerate them but once I get home I never have them in the fridge, always on the counter because I cook and bake alot.

    I learned that issue living in Mexico.
    They leave the eggs out, buy only for the week, Get em fresh every shopping day.
    Hope your tip helps others. I like it that way.

    I've been dropping my refrigerated egg into a bowl of warm water for 5 to 10 second bursts, then gently shaking it to distribute the warmth, repeating until it doesn't become cooler - usually two or three times. Then I combine the egg with gently- nuked (22 to 33 seconds) cream cheese or mascarpone. Voilà!

    This was fantastic! I'm the person that would set the eggs out and get distracted and forget why I had set them out and put them back in my fridge out of habit.
    But my Mom has only ever used warm eggs when she cooks. She's smart about such things!

    Thanks for giving the temperatures in Celsius too, for those of us outside the US. As mentioned by others our eggs here in the UK are sold unrefrigerated and (in my case) stay that way.

    Always use room temperature eggs to make my own mayonnaise. Funnily enough I buy eggs off the shelf in Ireland but yet I store them in the fridge when I take them home

    Very interesting, I was skeptical before as well. I never seem to remember to take the eggs out of the fridge so I submerge them in warm water for a few minutes and it works great. Thanks for doing this experiment for us Steve!

    Thanks for this. Since I've watched this I now always bring my eggs to room temp, even to scramble them. Just like in your video, they are much easier to completely scramble. Also noticed a minor thing; I have less of an issue with eggs shells.

    This was very interesting and really appreciate seeing that there IS a difference and I should start following directions more when recipes call for room temp eggs.

    I find that a lot of the things I made with almond flour was dry so will definitely try this tip! Also never saw a whisk like that, might have to get one.

    I was wondering about this, so thanks for clarifying why it’s important. I’ve been putting the eggs in a warm water bath just before baking but now may have to do an experiment to see if that works or I need to plan ahead and take the eggs out earlier🤔🤔🤔🤔🤔
