    Welcome back to baking school day 10! Today we are tackling the subject of the function of eggs in baking! Eggs are absolutely essential to baking and knowing their role in baking can help you become a confident baking. Eggs are best used at room temperature in baking because they are more readily absorbed into the batter and egg whites whip up to their highest volume at room temperature. Eggs are utilized in baking in three different forms: whole eggs, just eggs whites, and just egg yolks. Each form has different functions so let's dive in!

    Finally a baker with a technical understanding of baking. Please do stick to more science like another commenter said, but this was pretty damn good too

      Glad you enjoyed it! I try to explain approachable baking science. I don't want to over complicate it as it can overwhelm the everyday baker and for most day to day baking that information really isn't necessary. If you are interested in more in depth information I highly recommend the book "On Food and Cooking"

    Fun fact: medium eggs and large eggs have the same amount of yolk, never more unless it's a double yolk. The bigger the egg the more egg WHITE. Brown and white eggs are the same it just depends on the EARLOBE of the chicken 😊

    Love the info, for bread dough(milk bread) if I have to use either yolk or the white which is a must? This was a question on an exam and no one knew the answer.

    Thanks. I needed that. I started baking a lot of dessrts high in protein so I am beginning to know the tricks on wha ingredients to replace traditional ones. I wanted to know when to use the yoke and when I can do without it. Am I right to say that if I do a protein banana bread there is already a lot of moisture in the bananas and I shouldn't need the yoke?

      You could likely leave out the yolk in a banana bread! I haven't tried it but you could definitely try.

      @@BakerBettie I finally baked a chocolate protein banana bread with only the egg whites and it was quite moist and tender, but it was dense and not as light and fluffy as a normal banana bread as you can expect with most protein recipies. Yet I was quite satisfied.

    Really nice explanation. The only critic I can make is that the first 3 minutes are mostely useless. But thank you for such a good video after those 3 minutes :)

    You should use the water bottle method when separating the egg yolk from the egg white! Much easier (:

      Hi Kimberly! Yes, that is definitely an option. I personally don't prefer it, but you can for sure use a water bottle if that's what you prefer! :)

    May i ask, how come some recipe use 4 egg yolks, 4 egg whites and 1 whole egg?
    Is it possible to use 5 egg yolks and 5 egg whites instead?

      It needs to cool completely before cutting it. It will always smell eggy when warm.

      @@karamella4256 takes the eye part of the egg that's what makes the egg fresh..also grated lemon peel or juice will also remove it

    I always find the smell and taste of eggs overpowering in my desserts. How can I avoid that? Can I just skip the eggs from the recipes or reduce the number of eggs?

      Hi there. I would recommend looking for recipes that were specifically written to be egg free. You cannot just remove the eggs. They are very critical to recipes that include them for structure and texture.

    My chiffon cake gets deflated as soon as I turn the flame off 😢 why is that happening plz tell

      I'm wondering if it's underbaked. If it hasn't set yet it will deflate. Also make sure you aren't opening your oven door at all until it's completely set or the change in temperature can cause it to deflate.

      @@BakerBettie Oh I can't wait to see you do it. I know there's a way to make it crusty outside like a baguette but still have soft fluffy inside that won't go hard after a day or two. You can do it because you know the science of bread-making.

      It really depends on the recipe! If you are trying to whip egg whites and the yolk is in there then they won't whip up. What was the yolk added to?
