Smoked Meatloaf Recipe
This is my recipe for bbq meatloaf -- meat loaf with a barbecue flare.
Here's what you'll need for my smoked barbecue meatloaf recipe:
2lbs Ground Chuck (I used the 80-20)
1lb Ground Pork
8oz Bread Crumbs
2 Eggs
¼ cup Half and Half
½ Red Bell Pepper
5-6 Green Onions
4 Cloves of Garlic
1 Rib of Celery
1 TBS Moore's Original Marinade
2 TBS The BBQ Rub. (plus extra for the outside) www.killerhogs....
Salt & Pepper to taste
2 Aluminum Loaf Pans
Plastic Wrap
First you dice the vegetables then work it in with the ground beef, pork and seasonings. Then crack the two eggs and lightly beat them in a small bowl. Add the half and half to the eggs and whisk with a fork and add it to your mixture.
Work these ingredients by hand into the meat and vegetables until everything is combined and divide your meatloaf in half.
Then get your smoker to 275 degrees to smoke you barbecue meatloaf. Meatloaf can fall apart pretty easy due to moving it around too much, but to keep this from happening, I place them on one of my pork racks (you can get them here: www.killerhogs.... ) .
Spray the rack with cooking spray to keep the meatloaf from sticking and place it over a foil lined baking sheet.
Place the baking sheet, pork rack, and meatloaf directly on the cooking grate in the smoker. It will take approximately 2 hours at 275 degrees to get the meatloaf to an internal of 160. After 2 hours it is time to glaze your barbecue meatloaf.
To glaze, just brush on The BBQ Sauce www.killerhogs.... to the top and sides of the meatloaf. It needs about 15 minutes to caramelize on the meatloaf and it's done. Just like any meat coming off the smoker, give it a rest.
Now you're ready to eat your Barbecue Smoked Meatloaf.

Malcolm is the most genuine bbq guy on TH-cam! I love his delivery and style...and his recipes are the best. I've bought a lot of items from his shop/store. Everything is top notch! This video was put up 10 years ago. I watched his most recent video this morning. Malcolm, you are looking awesome these days! Keep taking care of your health. We need you around!!
I watched malcoms newer videos before I even found these older videos. It's amazing how far they have evolved in filming these !! Love this guy
yeah, finally did a meatloaf. My family loved it. Smoked meatloaf is the best tasting meatloaf I've ever cooked. Even better than my Mom's - just can't tell her that.
Better than Mom's? Hush yo' mouth!! I gotta try this. Mom's meatloaf is like heaven.

Your channel sure has evolved!
I’d love to see how this recipe evolved!
Making meatloaf tomorrow, for a family get together.
You do great work! Everything I’ve made of yours, is awesome! 👍🏻😋
MAN YOU HAVE COME A LONG WAY. MAKING THIS TODAY
Cooking it now. I left it in the fridge for 24 hours because I didn't have time to cook it yesterday. Can't wait!
Malcom... You are a God. You have never failed me and have been my go to guy for everything BBQ when I need a new idea. Thank you my friend, I appreciate ya!
Best grilling channel on TH-cam!! EVERYTHING he cooks is that 🔥
Shout out to Malcolm!!
Sending love from Baton Rouge
Myself, I am new to smoking. I have tried smoked meats and foods for years. Always wanted to try to do it myself. I have a masterbuilt of gravity fed 560. I've used it. Not even a handful of times. Loving it! Watching your videos helps me to know what direction I'm going. Love what you do. Keep up the good work
I tried your meatloaf recipe today, my wife and I agree that it's the best meatloaf we've ever had, absolutely excellent. Thanks for the video and the cooking class.
THIS IS AMAZING! YOU MUST use Malcom's Rub and BBQ Sauce - it wont be the same without it. I used my own meatloaf recipe. Following Malcom's instructions - in refrig to firm up - sprinkle top with The Killer Hog Rub - smoked for 2 hours - pecan wood. Then basted in Killer Hog BBQ Sauce. TO DIE FOR good. The smoke ring was amazing - the sauce was like icing on the cake! THANKS Malcom. DEAR READER - if you have not tried his BBQ Sauce - let me say this - 20+ years of trying sauces - THIS IS IT.
Malcom, If I'm on TH-cam it means I'm usually watching BBQ videos and yours are the best I've seen so far (and I really mean that man). I haven't smoked a meatloaf in a while so thanks for the inspiration. It's absolutely a night and day difference when compared to the old oven baked standard that's for sure.
I made this today and the family said it was to die for. I used Malcom's seasonings and followed the recipe. You gotta try this recipe. Awesome!!!!
I took this recipe and added 2 diced jalapeño peppers and 1 diced habanero cause we like our food spicy. Because its 34° outside today I had to let mine go for just about 3 hours before they were done. I let them rest for about 15 min after and omg were they good!!!! Thanks for the tip about the little loaf pans though... that made my life A LOT easier!!! Love your videos!!! I'm new to smoking and I've learned more by watching your videos than anywhere else!!
Made this recipe today. I have a Masterbuilt smoker. I followed the directions and almost to the minute t(e meatloaf reached 160. Another 15 mins after applying the bbq sauce and it was perfect. Even my wife, who isn’t thrilled with smoked meats, said it was the best meatloaf she’s ever had!
yeah, just like everything else, putting it on the smoker makes it taste so much better
I used the pellet smoker because it's really convenient when I'm shooting videos. But you can use any smoker - even a UDS - for this recipe. As long as you can maintain a constant temp for 2 hours, your good to go
I learned so much from this channel.
Ditto
This is now one of my wife's favorite meals and we make it every other week. And the leftovers make at least 4 more individual meals. The flavor, the amount of food, the cost of food... this is a home run meal.
Made this tonight. I changed a couple small things like the spices and marinade. I used apple-wood for smoke. This was the best meatloaf i have ever had. It turned out so good.
I’ve made quite a few of Malcom’s recipes and they never disappoint. The dirty bird chicken bites were a hit at my summer cookout.
Best Meat Loaf Ever!!! I tried this recipe on my weber smokey mountain with Tatonka Dust Seasoning and apple wood. It was the best meat loaf I ever had!!! This recipe raised my expectations of meatloaf to an unreachable level. I will never be able to eat anyone else's meatloaf again. Thanks for sharing this recipe!!! It is just AMAZING!!!
BBQ Pit Boys meatloaf is better js
+T. Poasa no way
+T- Mac I take it you never tried it
I did this a couple of years ago, and it just takes meatloaf to another level!! But even if it's done in the oven, I still use the BBQ sauce instead of ketchup or tomato paste....BBQ sauce on meatloaf is just better. I use both green and orange bell pepper along with red onion...and use Ritz crackers instead of bread crumbs. This meatloaf along with some smooth, buttery mashed potatoes, sweet corn, a salad and rolls makes one heck of a fine meal!!
I can honestly say that whenever I do something on my broil king pellet smoker my go to guy to look up a recipe is always Malcolm Reed your the best and I mean the best for backyard cooking
I'm about 6 years late, but 9:27, HOT DAMN!!! I love me some "ass end" of meatloaf. Best part!!!
Oh boy. I followed along with the exception of the half and half, I subbed mayo. I've made a lot of loafs, I use my grandma's recipe, but never put one on the grill. I fired up the PK with some b&b briquettes and some oak lump coal, took about 30 mins to dial in the grill to 275, right on the button 2 hours indirect. We twice ground 2lbs of sirloin and a pound of pork steaks. There's a local bbq company in Bakersfield,ca called Kickin Ash, glazed accordingly. My wife had an end of one, and wanted to cry, I lent her my shoulder. Thanks man, just picked up some of The BBQ Rub, dang. Keep up the great work!!!
I have made Malcolm's meatloaf for a while now and everyone agrees it's the best. Thanks for the videos Malcom, keep them coming man.
My wife has celiac disease so I made this recipe with a cup of finely chopped oatmeal instead of breadcrumbs tonight and it was awesome. Thanks for the video.
Did u grind the oatmeal?
Another thing to try is shallow fry onions and garlic in oil, and once browned, blend it all together and after it cools off, mix it with the meat
Bert Clayton Last time I added some chipotle’s in adobo to the mix before blending it up. Made fo a dynamite spread and/or marinade for chicken and pork chops
I’ve used ground rice cakes too for my gluten free wife
we had this last night (min the BBQ rub). totally the best meatloaf we have had! I had never thought of smoking meatloaf before til I seen your video. we also had your Mac n Cheese and beans.. loved those also!
We have done it this way a few times and we are hooked. Never again will bake unless inclement weather. Awesome job
It's a good recipe. thanks for checking it out.
I was looking for a smoked ground beef recipe for Sunday dinner. As soon as I saw this video I said "Malcolm Reed ain't done me wrong yet!" And sure enough, our boy delivered! Thanks for all the videos, Malcolm!
Great video! I bought a smoker today and this meatloaf is going to be my first attempt at smoking anything! I hope it's good because I'll be making this on a Sunday and I know I'll need something to cheer me up after watching my STL Rams play :). Have a good one!
Malcom, wife didn't like meatloaf until she tried this recipe. Who would have thought? She's not a huge fan of BBQ, but she loved this! Thanks!
Thanks Malcom...I will order from you and continue to support all my BBQ family. Be looking for my next order which will include 5lbs of The BBQ Rub
i have made this a half a dozen times with rave reviews from friends and family and will continue to make it many more times. thank you malcomb.
john koerner glad to hear it!
Malcom, thanks for having this channel and sharing all your knowledge with us bro! You are amazing!
Great recipe. I’ve done this several times on my smoker. The ground beef and pork really takes on the smoke. Good eating right there.
By far the absolute BEST smoked meatloaf recipe. It's my go to and I get phone calls from people asking when I'm going to make it again.
Hi Malcom,
I’ve never made meatloaf before and tried your recipe today. Let me tell you it was absolutely amazing!! My wood of choice is pecan for my stick burner and it came out great!! Thanks for sharing. Will definitely do it again.
Mercy, Mercy, Mercy, I tried this recipe and it was fantastic, simple quick and delicious . My wife even liked it. I think we will add this to our Christmas traditions.
I just cooked this exact recipe on my "Camp Chef Propane Smoke Vault 24-inch." Awesome!!!
Some TH-cam recipes look good on the screen but then you make it and its not that good. Malcom's recipes have never been one of those. This meatloaf is amazing. Everything I've tried of his is awesome. Thank u sir.
Hey Malcom! An updated smoked meatloaf video would be awesome, I think it’s about time!
I smoked a meat loaf today and it turned out pretty good for my first attempt. The family ate all of it! Thank you for sharing your talents and gifts with us!
Tried it, changed up some of the veg ingredients, and followed directions to the ‘t’. Came out awesome! Thanks Malcom
I made this yesterday on my green mountain grill. Wow...most amazing meatloaf I have ever had. Thank you so much for the channel. I have made a number of the recipes and each one knocked it out of the park
Best bbq instructions , best bbq cook , anybody can follow his instructions
I never heard of anyone smoking a meatloaf until my coworker did it a couple months bacc. And today your video popped up in my feed. Im deffinately going to try out your recipe. Thanks for all the awesome foods and smoking knowledge you share. Keep em comin
Tried this the other day for the first time and can't believe how well it turned out! Made two of them....didn't last long! Thanks for the recipe and video! Keep 'em coming!
Great idea using the loaf pans to form the meat loaf.
For the pork sausage use Italian sweet or hot, your choice.
Best bbq guy I’ve watched on TH-cam. Working on all the recipes. Thanks a lot and keep up the awesome channel!!!!
I made this yesterday and it was the best meatloaf we ever ate!! Very easy to follow instructions.
I made a few changes to the recipe here but stuck to it mostly. VERY impressive. I signed up for the newsletter because between this and your brisket recipe I'm impressed. Thank you.
I made this exact recipe last night and it turned out great! Thanks for the video Malcolm.
thanks Malcolm, you inspired me Im meatloaving today and I'm skipping the oven and going for the BIG GREEN EGG !
Made these tonight and came out great! Mine took about an hour and 40 minutes + 15 for the BBQ sauce to caramelize. I had a big spike at one point when I went in the house; came out 10 minutes later and it was up past 300°, ouch. Other thing was that there's no place in SoCal to find Moore's Marinade, so I had to improvise. Next time I'll order online. Either way thanks for the recipe and great video Malcom. What a dinner that was.
Tony Visconti Any type of marinade like that would work...
thanks man, I appreciate you checking it out
Malcom is awesome. I wish I could hang out and grill with this guy for a day. He’s a real inspiration to my own TH-cam channel on backyard bbq
Been watching your videos for years.
Love Killer Hogs "The BBQ Rub".
Your videos enabled me to produce really good Q out the gate.
Now I only use my UDS because of the flavor.
Can not WAIT to make this!
Thanks for all of your help, Malcom.
Meatloaf is something that I never think to make. Following your recipe it was fantastic! Everyone loved it and I bet it gets requested often.
I make mine similar, except I sautted the onions and bell peppers in bacon fat and chop up the bacon bits and mix in meat. Then add garlic at the end until fragrant, deglaze pan with a little red wine and reduce until 1/4. Once it cools then I mix into the meat, I leave a channel down the center and pack it with sharp cheddar, put a meat lid on it and I used diced white bread as a binder.
I did your recipe almost to a "t". Only thing i did different was minus bread crumbs, eggs and asian sauce. Grilled burgers instead. Your Killer Hogs The BBQ Rub is the bomb!
My wife's burgers had Sweet Baby Ray's for glaze. And mine had Stubbs thick sweet sauce.😋 Soooo good!
Also grilled talapias with Killer Hogs The BBQ Rub only.
Goodness Gracious. Soooo tasty.
I'm sold on this seasoning!
*_I love the color of this grill.>>> It looks so beautiful in our backyard! Reminds me of an old vintage car. My friend says the grill works great too! We also purchased the grill cover which has been great to protect it from the elements and getting dirty._*
First time griller success!
Here in the UK we are not big on cooking meat loaf. But I am defo going to try this on my smoker.
How can anyone down thumb any of Malcolm's videos? 🤷🏽♂️ It is one of favorite bbq channels, top 2 atleast!

Malcom you are the man! I have made this meatloaf twice now, and it’s a big hit. I have also made your St. Louis spare ribs ( the honey is for the money)!! Those ribs turned out amazing. FYI, I do all my cooking on my XL BGE.
I’m fixing this one next week. Looks fantastic Malcolm. Thanks for the recipe and video.
I've never cooked meatloaf on a grill before but this sure looks good enough to try.
Hey Malcom Merry Christmas. Just letting you know it's Christmas Eve in Kansas City and I just put four of these on the smoker and hour ago for dinner with guests tonight. Such a great way to have a meatloaf. It almost deserves a different name because it's so different from
a traditional meatloaf. Hey I recently made these and added little cubes of fresh parmesan I cut from a wedge and added a handful of parm cubes to each loaf with the vegetables. It was outstanding. Great recipe and technique...you make it easy for a noob like me to produce lovely food off a smoker.
Hi Malcom! I love what you are doing here with all your videos. You definitely know your way around a BBQ brother! Keep up the great work, my whole family is into your content. You rock! Thanks, Damien
Looks great. I usually smoke mine at 300 but have two in now at 275. Great channel.
Hey man just had to drop a comment. I used your recipe and was so upset I didn't make more! I thought it was just gonna be meatloaf but to my surprise it was amazing. Great recipe and channel
hey mate i just wanted to say thanks for this recipe video, i've actually been a long time fan of you and your channel over the laste maybe 3 years i have been learning about briskets and chickens and sometimes pokr, not so keen on pork these days but yeah man the beef and the slow cooking and whatnot, i always really appreciate you and your channel specifically its one of the first i look for, although i gotta admit i do like the bbqpitboys theme song too :)
thanks for showing me this man, i have a kilo of ground beef all flavoured up and into a log the shape of a pringles can, literally inside a pringles can in the fridge overnight to get a shape, its got onion and garlic and peri peri chillis inside plus a bunch of paprikia cumin nutmeg cinnamin black pepper white pepper cilantro parsley rosemary its got basil its got oregeno its got extra garlic powder and onion pwder, it's going to be full on..... and yet while i am confident in cooking a lamb shoulder or beef ribs or a chicken, this particulr problem of how to slow cook the smoker meat log.... man thankyou so much
i personally dont want no sweet on my beef, so i will skip the bbq sauce glaze but i really genuinely appreciate your videos so much and i picked up that tip today about applying a rub before popping it on the grill, thats so cool i will try it when i cook up my beef log in the morning dude cheers, ive learned a lot from your bbq vids man i appreiate it
This is my favorite meatloaf recipe. Would love to see a updated version in the new setup.
Gonna do my first meatloaf on the smoker this weekend next to my turkey. Always wanted to try meatloaf on the smoker!! Thanks for the tip of forming it in the pan then putting directly on the grate. Wasn't sure if it should cook in the pan or not.
Thanks for posting. I am a weekend BBQ’r and I have really enjoyed your recipes and instructions.
I give this dude his props he hasn't let me down yet good stuff
