Vegan Nigerian Okra Soup| Vegan African Food Recipe (Vegan Meal Ideas)

    I made Vegan Nigerian Okro/Okra soup. I used extra firm organic tofu and baby Bella mushrooms as the meat substitute but you can use any other thing you like.
    Also, I didn’t add any vegetable stock cubes, just salt and local spices like locust beans
    Ingredients
    12 oz okra - Cut in 3 ways
    2oz baby Bella mushrooms (it came in a 4oz pack and I just used about half of it),
    14oz/397g Extra firm organic Tofu (I used ‘Nasoya’, the whole pack) - fried and seasoned with onion powder and salt
    1 medium diced onion
    1 1/2 cooking spoonful palm oil,
    1 tbs Locust beans (iru),
    1 clove garlic,
    1/4 of a thumb of ginger,
    1 1/2 - 2tsp tsp salt,
    1/2 cup of water - the amount of water added depends on how much water you blended the okra with in the first place. So be careful not to use too much
    a generous handful of chopped spinach,
    1 deseeded scotch bonnet (for the garnish),
    Pepper mix - for this, i blended 2 large bell peppers, 2 or 3 scotch bonnets & 1 medium onion. After i boiled it to reduce the moisture so it would be easier for me to fry it in the palm oil.

    I air fried the tofu, and didn’t include any mushrooms. Loved, loved, loved.

    Words can’t express how thankful I am for you posting this. Growing up Nigerian, i wanted to make the change to a plant based lifestyle but I thought that not eating the meat part of the egusi was enough. BIG mistake😂 to took me 8 months to realize that if I truly wanna be vegan I have to start making my own alternatives to the Nigerian food I love. I’ll definitely cook this in the near future

    A tip: I add seaweed (kelp or nori depending on what I want) to my recipes to substitute dried fish. Works like a charm. I add it to my yébéssé fionfion as well. Amazing.

    UPDATE! I’ve made this 4 times! My husband won’t let me rest, he wants okra soup every day! Lol
    I made this tonight! It’s SOOOOO good! I don’t like tofu so I doubled the mushroom. I put my okra soup on top of basmati rice. This soup is so nice! In fact my hubby and I cannot wait to have it again for dinner tomorrow! God bless you for sharing! ❤

    I made it this morning and it was DELICIOUUUSSS!! I added some vegan chicken bouillon to give it a more meaty flavor and omitted the tofu! ❤️ I served it with plantain and Fufu 🥰

    Great video, I've love substituting mushrooms for meat in stews but never thought to add tofu. Looks like it came out yummy!

    By the way the Hausa people call Tofu Beske which is Fried Wara. Wara is made from either Milk Curd or Soya Beans. Be sure to specify.

      Achiote oil is a good substitute for palm oil you just get some annatto seeds and cook them in an oil of your choice, gives it the colour and great flavour

      There is nothing wrong with palm oil, it is brimming with retinol/vitamin A, that is why it is red in colour. There is hardly any other oil that can surpass its nutritional value. ALL oils go rancid when cooked beyond a certain temperature and that is when they become unhealthy. The cooking method used in this video would turn any oil unhealthy by the time the food is done. Better to use water and add oil towards the end of your cooking. There is also something called residual heat which continues cooking the food after the fire is turned off.

      @Psychedelic Child - you don't have to put the locust beans in your okro stew to enjoy it! Add other things!

    Do you think this recipe would taste similar omitting the Palm oil? I'm trying to cut out oils.

      Yes, for the most part! People make oil-less okra soup all the time, you might just miss out on the slightly smoky flavor palm oil brings but It'd taste great still!

      Vegetable oil? I’ve never tried it but I’m guessing it should be a great substitute although you’d be missing the distinct palm oil taste. Thanks for watching 💕

      Its probably not good quality palm oil, I have bought that kind before. Search for a better source

      Any other vegetable oil should be a good replacement however you won’t get the flavors that palm oil brings to the dish

    I tried to make it tonight but my okra wasn't slimy so my soup didn't draw. Should I add water? What other leaves can you use? Cassava? Bitterleaf? Please help me!

      So sorry to hear that. I’m not sure why that happened. Did you blend some of the okra? Doing so helps release the mucilage

      Did you cover the pot while cooking? Maybe that’s why. In Nigeria, we don’t cover such soups so we don’t loose their slimy consistency.
