Zucchini boats!!! I use ground turkey, mushrooms, marinara, cheeses, and some good Italian seasonings. Scoop out the seed center, brown meat and mushrooms and combine with marinara and top with cheese. Bake until Zucchini is easily poked with a fork.

Oh no! I am so sorry to hear about your seedlings! We do have mice in the garden and sometimes in the house, but none have gotten to my seedlings yet (knock on wood!). A rabbit did get to my brassica seedlings that were hardening off on the porch one year. A couple things you could do. First, I would get and set some traps - you can find ones that catch them and then release them far away from the house if you don't want to use the killing ones. We do use killing ones, but not the snap traps - one that is supposed to be faster and more humane - honestly I make my husband deal with them... You can try to deter them with peppermint essential oil - put some on cloths or cotton balls and leave around your seedlings. Though if they found the tasty seedlings already that may not be enough. I would also try to create some sort of physical barrier around your seedlings - I am not sure what your set up is so I don't know what that would look like, but trying couldn't hurt. I would also have a look around your house for holes that the might be allowing the mice in - apparently copper mesh is the best thing to keep them out - they can get through really small holes (I think size of nickel or bigger) so it can be hard to find them. That is such a frustrating issue to have, and it is honestly why I struggle with my food storage - because I know there are mice in the best storage spaces and I don't want them getting into my food! I hope you can restart your seedlings and protect them from the mouse!
