Jerusalem Artichoke Soup - DIY

    Subscribe to our channel for a BRAND NEW film out every single Wednesday
    Recipe - Serves 6:
    1 x onion, peeled and chopped
    2 x leeks, roughly chopped
    2 x large carrots, peeled and chopped
    3 sticks of celery, roughly chopped
    1 kg of Jerusalem Artichokes washed and / peeled and roughly chopped
    1 x bay leaf
    1l full cream milk
    Salt and pepper
    200g butter
    Method:
    Heat butter in a large pot, add the onions, carrots, celery & leeks. Sauté until golden brown. Add the bay leaf and the Jerusalem artichokes, stir through and then add the milk.
    Cook for about 30 - 40 mins until the veggies are soft.
    Remove the bay leaf and blend soup until smooth. Pass through a sieve and return to the pot. Season to taste and re heat.

    A friend gave me 4 small sunchokes in Februari and we planted them. Today we harvested more than 4 kilos of sunchokes. 4 of them became 4 kiloes, amazing.
    I'll try this soup, thanks.

    I made this years ago and it was so delicious - was even able to plant/harvest my own Jerusalem artichokes. I will make more soup on this snowy day! Thank you for sharing!

    Thank you thank you thank you! First year planting Jerusalem artichoke; planted them for the tall flowers surrounding my Mom's deck, and then the diabetic benefits for my Dad. Didn't realize just how many tubers would be produced, and I only planted 12, 3 of which the wind took out, although they still had tubers as I let them lay as they were after the winds. We've pretty much been roasting them and I've been on the hunt for new recipes. Will definitely be making this a few times this fall/winter! Thank you again.

    Great recipe, and awesome video! I harvested my sunchokes this morning and the. found this video. I served this soup at a party and everyone was blown away. I had to improvise and mix heavy cream with 2% milk but it still came delicious. Thanks for sharing!

    oh I love this! I've been growing Sunchokes for a couple of years and really enjoy them roasted like tator tots... but I had not thought of making a soup! awesome, because I have so many I need to harvest now and this is a way to process and freeze to preserve and eat until next season! Thank you!

    I can't have cream so will use stock instead is that okay?

      It's just the way things are unfortunately.
      It's none of our business to tell somebody else what to eat or wear on their feet
