Anytime u using yeast u must use warm water to dissolve it not cold water. Next time. It still not a failure but a Style. I enjoy how u cook n I can too. I'VE 2 ackee trees here n it's loaded w/ackees. Like to use Olive oil, coconut r grapeseed oil as they r loaded w/vitamins.

I put really cold water in a bottle and Use it as a rolling pin. The pastry stay cold when you roll. Put the bottle in the fridge to cool the water in it!
You need to let the flour rest for at least half an hour before you make the bakes you could use warm water to dissolve your yeast then add to flour mix still need to rest it before you fry now sister Val this is what I do with the self rising flour I mix it with the regular flour and use no baking powder or salt in it say 1 cup regular flour 1 cup self rising I use that way to fry dumplings too.
Hi Val, a few tips for you if you don’t mind: Knead flour with warm water or milk Rest flour after kneading Make dough balls smaller Use a wider pot Continuously flick oil with spoon on top of the bakes, this is key to get it blow up like balloons like you said., it may not be the yeast. Good try with practice you can get if easily.

Theres also a twist to fry bake you can add a quarter tsp baking soda to the flour and the butter is optional and its either yeast or baking powder your choice, you did a good job looks inviting
MIss Val you did everything right but in my opinion its the consistancy of the dough the lighter you mix it and the longer you let it proof you would get a better bake, you are an experienced cook am sure next time it would be perfect just knead at a lighter consistancy

Val you rolled out the dough a little too thin you should have left it the way it was before you rolled it out. Not all the time we get things the way we want it to be 🇹🇹🥰

I usually make my dough rest for around 25 mins before frying. I usually use baking powder only. No yeast and they puff really well.
