How To Make Fried Bake | Foodie Nation

  • Chef Jason teaches Kezzianne how to make Fried Bakes, a staple in Trinbagonian breakfast and street cuisine:
    Yield: 18 Bakes
    INGREDIENTS
    4 Cups of All Purpose Flour
    1 ¼ Tbsp of Baking Powder
    2 ½ Tsp Sugar
    1 Tsp Salt
    1 Tbsp Yeast
    2 Tbsp of Butter (Room Temperature)
    1 ½ - 2 Cups of Water
    3 Cups of Coconut Oil
    METHOD
    1. In a large mixing bowl, add flour, baking powder, sugar and salt. Using your hands mix well ensuring all ingredients are dispersed evenly. Add yeast separately and also disperse evenly.
    2. Add butter and using your finger tips - rub the butter into the flour and mix well. Then slowly add water a little at a time while mixing with your hand ensuring flour absorbs the water.
    3. The dough will start to pull together and be grainy in texture. At this point is when you lightly dust your counter with flour and place your dough on it and start to knead for 3 to 4 minutes until homogenous.
    4. Dough should be placed back in bowl and covered with a tea towel and let sit for 10 minutes to relax.
    5. Flour your counter top loosely and portion dough into golf size balls (loys) and roll gently with the cusp of your hands to form a nice smooth finish. Cover with tea towel again and let sit for 10 minutes.
    6. Place your oil into a frying pan over medium heat and meanwhile, take your dough balls and flatten them gently with a rolling pin to the desired circular size about ¼ inch thick.
    7. Place bakes into the hot oil one at a time and using a solid pot spoon, base the top of the bakes by pouring hot oil over.
    8. Flip over immediately after and this will assist the bake in rising and swelling.
    9. Remove from heat and place on paper napkins or brown paper to absorb additional oil.
    10. Cut bakes open and enjoy with butter, cheese or even corned beef, saltfish buljol, fried ochro and plantains etc.

    Good recipe. First time making fried bake. They came out great. My background is Jamaican. I gave some to my mom and she was impressed. "How did you get the inside hollow?", she asked. "And it was not greasy at all"... delicious. I stuffed it with braised oxtail, sweet friend plantain and creamy coleslaw.

      There was a Trini lady in Youngstown that opened a Caribbean restaurant with occasional live music a few years ago. I have only been there a few times but I think it is still around.

    Yummy looks similar to Fried Dumpling or Johnny Cake as we call it in Jamaica but it is lighter not to much dough on the inside, I can eat some of that with sweet plantain and Calaloo 🤗

    I had these at a truck-stop in WNY on the reservation. I was blown away that the native fried bread was the same as trini fried roti/bake. It was served with beans and salted beef.

    This morning my husband decided to try your recipe with our left over lamb pepper pot, and oh my goodness, we ended up having to make three extra batches to fill our stomach and our sleepover guests from our new years party.     I remember my Granny making fry bake on the weekends with salt fish or sometimes Vienna sausage, but if there was nothing else left, I would eat it with just butter. This brings back so many childhood memories. I really miss her.

    its a staple all over the caribbean. its clearly from west africans, since every caribbean countries eat it. In my country we call it johnny cake.

      Nad DA no this isn’t an “Indian Dish.” Indians have many varieties of rotis and this isn’t one of them. This fried bread or bakes ORIGINATED in Africa.

      @Amy Zane it is similar to Fried Dumpling just lighter not so doughy and tight like Jamaican Fried Dumpling. Born and raised on the JA style though when my mom made it growing up it was smaller, these Jamaican restaurants in The Bronx, make these huge baseball size dumpling that can knock you out.
