Very smart of you using hair dryer instead of keeping the pork in the fridge in order to get rid of water from the skin. I definitely will try your method and also love your delicious crispy egg tofu too.👍👍👍

肥媽好多謝你呀!我都係係英國留學但係呢邊嘅燒味真係認真垃圾同埋難食。你今次教點樣整燒肉亦都解決咗我成日都想食豆腐火腩嘅願望。
肥媽燒肉唔易脆,看似脆, 整好,冇乜人肯讚!你煮淋塊豬花腩,方法對拿出來,不需用吹筒,只要抹乾水份!調味正確,皮插孔越多越密最好, 有豬油湧出,再抹乾, 用白醋2湯匙加一湯匙梳打粉,和勻塗在豬皮上, 錫纸包肉,豬皮不染有調味, 不要蓋豬放雪櫃六小時, 抽乾水份, 放氣炸鍋前, 在皮上噴層油, 燒成金黃色, 這脆皮的庇決就是梳打粉加白醋呀!大家研究! 精益求精,不防一試便知龍與鳳!你也可以用你的方法都得! PS: 梳打加白醋, 啲皮脆到人人讚! 不要忘氣炸鍋前要噴一層薄油呀!

肥媽, 只想告訴妳我的成果... 我前天試了妳的做燒肉方法, 但是不大成功, 我的氣炸鍋最低火是 200 C, 半小時後, 皮沒有轉顏色或爆皮...再焗多半小時, 皮仍未爆.... 所以我立即拿出來放入小焗爐, 用 350 在上面 燒烤, 十分鐘立即爆皮... 前後共燒烤(Broil) 廿分鐘, 皮已 Crispy, 肉仍嫩滑, 但廿分鐘後皮開始硬少少.... 可能下次再做時, 我會在氣炸鍋用 350 ... 希望下次完美成功👍😄😁😆
