    In this video, we'll guide you through the simple steps to create this wholesome salad. Packed with protein-rich quinoa and chickpeas, crunchy fresh vegetables like carrots and cucumber, and a sweet burst of pomegranate seeds, this salad is a perfect balance of flavours and textures.
    🌶️ The star of the show is our homemade Chilli-Lime dressing - a blend of zesty lime juice, fiery red chilli, aromatic ginger, and refreshing mint, all whisked together with olive and vegetable oils. This dressing adds an incredible depth of flavour to the salad, making each bite a delightful experience.
    🍽️ This Quinoa and Chickpea Salad is ideal for a nutritious lunch, a side dish at dinner, or even as a standout dish at your next gathering. It's not only vegan and gluten-free but also incredibly versatile - feel free to add your favourite ingredients to make it your own!

    Ingredients:
    Quinoa: 1 bowl
    Chickpeas: 1 bowl (cooked or canned)
    Carrot: 1, finely chopped
    Cucumber: 1 cup, finely chopped
    Red Onion: 1, finely chopped
    Coriander: A handful, chopped
    Pomegranate Seeds: To taste
    For the Chilli-Lime Dressing:
    Lime: Juice of 1 lime
    Olive Oil: 2-3 tablespoons
    Vegetable Oil: 1 tablespoon
    Red Chilli: 1, finely chopped or to taste
    Sea Salt: 1/2 teaspoon
    Ginger Paste: 1 heaped teaspoon
    Sugar: 1 teaspoon
    Rice Vinegar: 2 tablespoons
    Mint Leaves: 7-8, finely chopped
    Method:
    Prep the Quinoa:
    Start by thoroughly washing the quinoa under cold water to remove any bitterness. Do this a few times for best results.
    Soak the washed quinoa for about 15 minutes. This helps in cooking it perfectly.
    Chop the Vegetables:
    While the quinoa is soaking, finely chop all your vegetables - carrots, cucumber, onions, and any other veggies you'd like to include.
    Set these chopped vegetables aside. They'll add a fresh crunch to your salad.
    Prepare the Dressing:
    In a blender, combine all the ingredients for your chilli-lime dressing - lime juice, olive oil, vegetable oil, chopped red chilli, sea salt, ginger paste, sugar, rice vinegar, and mint leaves.
    Blend until smooth and then set this zesty dressing aside.
    Cook the Quinoa:
    Drain the soaked quinoa and transfer it to a saucepan.
    Add water in the ratio of 1 part quinoa to 1 and 3/4 parts water. Depending on your cooker and the desired texture, you may need to adjust the amount of water up to two full cups.
    Bring the water to a boil, then reduce the heat to a simmer and cook for about 15 minutes, or until the quinoa is fluffy and fully cooked.
    Cool the Quinoa:
    Once cooked, remove the quinoa from heat and let it cool. This ensures that it doesn't steam the fresh vegetables when mixed.
    Combine and Dress:
    In a large bowl, gently fold the cooled quinoa with the chopped vegetables.
    Pour the chilli-lime dressing over the salad and mix gently until everything is evenly coated.
    Serve and Enjoy:
