Explore the lost recipes of Lucknow straight from the royal kitchen prepared by Begum Parveen Jafar including iconic delicacies like Moti Pulao which requires a skilled cook to prepare the moti using a complex cooking technique along with Matar Pulao. The key ingridents that adds up the flavour of Pulao are Basmati rice, red lentils, daloo, mirch and javitri. The episode also includes preparation of Dorah Kebab, the recipe involves marinating meat in a specific spice blend, wrapping a silk dorra (silk thread) around the kebab & roasting it. The spice blend includes ingredients like papita, gurde, and chandan powder. Dum Bataer, a special recipe from Lucknow, is known for its unique ingredients like lacquered gourds and high-quality ghee. She was not rude rather she was straight forward and didn't do the gimmick which mordern cooks do which is they are concerned about everthing except for cooking.people eat food in high end restraunt not because it tastes good but because they just wanted to show off that they can afford to do so.

Interesting, Dhaga Kabab is available commonly in Karachi, a lot of Lucknowi people immigrated here in and after 1947, so maybe the recipe lived on with the immigrants but fell out of fashion in Lucknow itself.
It is available in many traditional muslim homes in lucknow. Lucknow did not see much migration in 1947 partation. Most of lucknow Muslims lived back in lucknow after partation in 1947. Only some rich elites migrated. But, most Muslims lived back in lucknow.

Hi Aditya, Bater Dum Pukht and kayasth cuisine has a very interesting link with the Grand master of story telling Premchand ,himself an awadhi kayasth. He wrote "Bade Ghar ki beti" story where there is fight over cooking bater by sister in law from a rich family married to a family not so rich. You will connect quantity of ghee and bater with the story!

Dum bater mein namak kabhie dalaa tha .. lucknow edition was amazing ,I found the Dora kabab very interesting with sandal wood powder . And the moti egg white. The lady was so elegant n the language was so sophiscated . This shows how Rich the times were pure food was available , big kitchens ..larger than life canvas.. lovely .. like walking thru the era .. ❤

The procedure of Pulao was similar to that of Biryani. Pulao was the favourite dish of Nawabs and Royal Families, but we in Pakistan give less value to it as compared to Biryani.
Bhai I'm from Lucknow, Ye Pulao toh khali demo hai agar biryani humare yahan ki khali toh kisi bhi mulk ka khana bhool jaoge app. Lucknow ka sabse khraab se khraab khana kisi ke bhi mulk ke best khane se kaafi behtar hota hai.
I don't agree as a Pakistani even,pulao has it's own place,my grandparents are from UPian origin and we ate yakhni pulao with shami kabab or call it fondly as kawab❤.

Very interesting indeed to delve into the history of the lost recipes of Lukhnow. Some of these I believe are there in a slight variations. Like the Dora Kabab we in Dhaka, Bangladesh have an old Nawabi Kabab known as Shutli Kabab (Shutli - means string like dora). The flavors are similar but with a little bit more on heat side - from the garam masala especially cloves. It's only available in old part of the city that used to be the capital of India in 1600 during the Mughal era. Growing up we visited the old Dhaka where most of relatives lived for Sunday brunch and the Shutli Kabab with Baqar Khani (dry flat bread that had ghee and the special Dhaka cheese). Although, that kind of shutli kabab is no longer there because the recipes passing through generations have changed and there is a paucity of ingredients as well. Most importantly the customers who appreciate these kinds of recipes are now dwindling.

I have eaten these Dora kebabs in my teenage when I was about 17 years old. Then there was a famous shop near Chapatiyan Nakkhas.
Sir chandan is one of the main ingredient in galawat( AKA TUNDE) and kakori kebab...
I remember there was 1 restaurant - Pakwaan - in Lucknow which served dhaga kebab! Was so sad when it closed down.
