I like this series 'tyohar ki thali'. Everything is so beautiful...... but there is no 'khurma' (chhuara) in this sheer khurma. In the traditional recipe, the milk is boiled with soaked chhuara. Roasted dryfruits and roasted sewai are added at the end. This reminded me of the time when I was pursuing MD during Covid. All of us were on hospital duty. Our leaves had been cancelled. I could not go home on Id. I prepared sheer khurma on an induction cooker and shared with all my friends in the hostel. It was a memorable day.
this is always a fun program to watch; as a non-indian I get to know a lot about indian food culture, celebratory culture too. but both Kaabuli and pulao outside india are non-vegetarian dishes. pulaos are often made in meat broths as is Kaabuli with lamb since Kabuli IS a pulao. :) i believe the 'Qubooli' is a rice dish from hyderabad india which is vegetarian. made with chickpeas/dal and it looks nothing like kaabuli so i wonder if it is from kabul at all.

Qabili Palow known as Aash in Tajikistan and Uzbekistan is a Central Asian cuisine favourite of Persian Empire times. The key ingredients of the dish are lamb, rice, carrots & sesame oil. And each region then have an ingredient of their own added to it. Every cuisine in Khorasan (Afghanistan today) has 100’s & even thousands years of history serving royalties and the commons across the globe. Unfortunately, progress & time stopped in the country since the first British/Pashtoon/Tslibaan Invasion and the Settlements of Pathan’s/Pashtoons from East India. Despite all the unfortunate events for the past 200 years the authenticity of food in our Great Ariana Bakhtar Khorasan remains unchanged.🌷

Although beautifully presented Please don't mind but this is not sheer khurma. It can be called a seviyan ki kheer at the best. It can be called a Sheer khurma only after following a distinct method of making it and unique ingredients.
This is Indian version of Kabuli, I have had real dish at an Afghan restaurant here in LA. They put shredded carrots and raisins not lentils. It was sweet because they put sugar in the dish when cooking carrots and raisins. I asked one of the waiters. So, I didnt like it much. Im not a fan of rice dishes in general but I only like Biryani.
Tried your best. But this is not the way. You need to boil dal then fry onion, add ginger garlic paste, chilli tumeric if u want 2 tomatoes fresh dhania and green chill , cardamom, clove, cinnamon stick then cook and mix and saute slowly add little curd then rest same biryani way
Qubuli jo Afghanistan aur Pakistan mn bnti usmn safe chane k sath mutton ya beef padta h jb k hm Indians chane ke dal se bnate hn. Aur meat ya meatballs nahi dalte. Bachpn se esi he qubooli pulao khate aye hn.
Kabuli is completely different from qubooli which sakshi made. Qubooli is the correct word which is made in hyderabad whereas kabuli pulav is famous Afghani dish made with rice,meat, lots of raisins & grated carrot. Here in uk you have Afghani, turkish & Indian restaurants apart from English.
