Welcome back sweet friends and family. Just in case you’re new, I’m Dr. Erika and I share what I eat in a day OMAD vlogs and weight loss motivation. I’ve been a daily intermittent faster since June 2018. I’ve lost and kept off 60 lbs for over 3 years now. I also exercise everyday. I’d love for you to join me on this journey as I share my story.

Apple Pie Oatmeal:
1/2 c water
1/2 c rolled oats
1 medium apple
powdered peanut butter
cinnamon
light brown sugar
raw agave nectar or maple syrup
Warm in the microwave on high for 2 1/2 minutes (longer or shorter depending on how firm you want your apples)
Enjoy!!!
Taco Soup
**(customize it to your liking)**
1 can pinto beans
1 can black beans
1 can corn
1 can diced tomatoes
impossible meat
1 taco mix packet
spaghetti sauce (approximately 1 cup)

Good morning friends! For the July challenge, I am focused on consistency. I went back to my trainer this morning. It’s group training so it helps with the accountability and people expecting me to show up. But I am doing it for myself. I had 15 minutes of elliptical and 45 minutes of strength training. I’m drinking my water. I have my Stanley 40 ounce dupe filled up and I’m about a little over halfway through it. My goals for defy July:
Drink 80 oz of water a day
Get at least 8K steps a day
3 days a week of strength training
3-4 days of some form of cardio for 45 minutes
Track all my nutrition on WW app
Won’t eat after 8pm
I am grateful for my job that it provides opportunity for growth and development, my family, and my ability to move.
I’m calling this my day 1 of consistency. I hope everyone has a great day!

Morning Beautiful Friend! Your dress is so pretty 💙Today’s a great day! I completed my morning conditioning/strength training (30 min). Drinking this gallon of water 💦. My personal goal for this challenge is to switch to a vegetarian lifestyle.I always wanted to make this change but I was never consistent and making excuses. This time I’m ready to prove to myself I can 🎉! My husband joining in also! Later we’re going on a 5 mile walk to kick off this challenge! Talk tomorrow 💕
