LEMON SORBET WITHOUT ICE CREAM MACHINE and without milk, Sonia Peronaci

  • Let's prepare the lemon sorbet together without the ice cream maker. An excellent end of a meal, very fragrant with lemon juice and zest and without milk!

    🍳 INGREDIENTS 🍳
    lemon juice 250 g + grated rind of the lemons used
    water 500 g
    sugar 250 g +30 g
    pasteurized egg white 60 g
    🍳 PROCEDURE 🍳
    00:00 - To prepare lemon sorbet without an ice cream maker, start by recovering the lemon zest, only the yellow part.
    00:54 - Squeeze 250 g of lemon juice into a saucepan, pour the water, sugar and grated lemon zest. Bring to the boil, stirring to dissolve the sugar.
    01:32 - Turn off the heat and add the juice from the lemons, then mix and pour it into a cold container. Let it cool to room temperature then put it in a low and wide container and place it in the freezer for 30 minutes.
    03:04 - In the meantime, whisk the egg whites and, when they turn white, add 30 g of sugar and continue beating for another minute, until you get a very creamy mixture.
    03:44 - Add the whipped egg white to the chilled lemon mixture, mix gently with a whisk, and place in the freezer for 30 minutes.
    04:22 - After the indicated time, take the mixture and mix/break it with a whisk, then put it back in the freezer for another 30 minutes and repeat the same operation to break the ice crystals. The more times you do it, the finer your sorbet will be.
    05:00 - When you have obtained a satisfactory result, put the sorbet in the cups or in the dug out lemon peels and serve! If you want it creamier, take it out of the freezer, mix it with a whisk until it reaches the desired consistency, otherwise you can blend it for a few seconds and make it creamy.

      Ciao! Devi ottenere 250 g di succo. La quantità dei limoni dipende dalla grandezza di quelli che scegli.

    Il limone non si deve bollire ,poiché si perde la vitamina C . Un potente antinfiammatorio.
