    THE RECIPE
    1. Heat a full kettle of water to 200 degrees Fahrenheit (93 degrees Celsius)
    2. Place a white paper filter into a ceramic Hario V60 and rinse it thoroughly
    3. Grind coffee very finely
    4. If possible, sift your coffee so that majority of it is 400um
    5. Place 15g ground and coffee into the V60 and make sure it is level
    6. Start timer and spiral pour 30g water
    7. At :30 CENTER POUR up to 250g water in 40-45s
    8. At 2:00-2:15, drawdown should be complete

    Chad Wang presentation is so engaging, and well organized, and his clarity of voice and the pace of articulation is so comfortable. He makes it clear that he as a barista, can make his coffee more enjoyable & meaningful via meaningful connections from the barista to the guest. He breaks that connection into 3 connections (from origins to cup), First connection: the origins, the farmers & Roasting. Second Connection: Brewing He explains why he use ceramic V60 for his coffee, and his brewing method. Third Connection: Tasting of his Panama Geisha coffee.

    13:12, He paused the interviewer and give thanks to every judges and remember their name too!!.

      @@recurrenTopology His public info only indicates that he moved to the UK to study when he's 12 and he had stayed there until he finished his master's. It doesn't specify where of the UK though so you could be right! I'm not that good with accents but he definitely doesn't sound English.
