Anthony Bourdain's Seafood Stew
Serves 4-6
1 bottle dry red wine
1 tablespoon extra-virgin olive oil
1 green pepper, cut into ½-inch pieces
1 medium onion, cut into ½-inch pieces
7 to 8 garlic cloves, thinly sliced
1 tablespoon cumin
1 stem fresh oregano, leaves removed
1 teaspoon crushed red pepper flakes
4 large octopus tentacles, cut into ½-inch pieces
1 tablespoon tomato paste
1 (16-ounce) can crushed tomatoes
2 cups homemade octopus stock, or store-bought, low-sodium vegetable stock
2 Yukon Gold potatoes, cut into ½-inch pieces
2 cod fillets (7to 8 ounces each), cut into 1-inch pieces
12 little neck or top neck clams, scrubbed
Fine sea salt and freshly ground black pepper
French baguette, for serving
1. In a medium pot over medium heat, add wine. Simmer until wine is reduced by two-thirds.
2. Heat oil a large, high-sided skillet over medium-high heat. Add onion, green pepper, and garlic, and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add cumin, oregano, and pepper flakes, and cook, stirring, until fragrant, about 1 minute. Add octopus pieces and cook until juices release, 1-2 minutes. Pour reduced wine into pan; scrape bottom of pan using a wooden spoon to dislodge any browned bits. Add the tomato paste and crushed tomatoes and enough of the octopus stock to cover by 1 inch; bring to a boil. Reduce heat, and add the potatoes; gently simmer until tender, about 45 minutes.
3. Add cod and clams, and cook, covered, until clams have opened, 10 to 15 minutes. Season with salt and pepper. Serve immediately, with bread alongside, or the following day...it's even better.

It’s crazy that I can feel so connected to a man I didn’t even know... Hearing about his death was something I was not expecting, he seemed to really love his life. Here’s to you Anthony, you gave a lot of yourself to us. I wish you would’ve gotten help and just taken some time off - but it’s not to be. I pray your at peace now being away from this rat race. The world is a little less bright without your witty humor, countless stories, and opinions. Thanks for all of the content that we can rewatch - you lived quite a bit in 61 years. Get some rest...
This morning, I learned that Anthony Bourdain passed. I watched this video in his honor, as a sort of private memorial of a man that I esteemed.
The news reported that Chef Eric found his friend, Anthony, unresponsive in a Paris Hotel.
How terribly tragic, and what a deep loss Anthony's passing is for so many.
I express respectful condolences to his family-especially his daughter and brother, but also to Chef Eric. It must have been terrible to find Anthony deceased.
Like so many others, I will miss Anthony Bourdain, who was so multi-talented.
What a sad day this is!
One thing great about Tony is there are so many videos of him, that enable us to keep learning for years to come.
Missing him, loved his shows, his attitude on life and other chefs. Will miss him forever. My sympathies to his daughter and Eric Ripert.
Anthony was one of a kind! I still can’t believe he’s gone, and so incredibly sad that Eric found him.

Gotta be honest I tear up sometimes watching old Bourdain videos. I remember being so down and depressed as a teen and when I came home I’d watch No Reservations with my mom and we’d just live through him and imagine going to the different locations. of course he pulls you in with his great story telling and his real talk no bs attitude. He is missed. One of the few people on TV that I really wanted to meet in person.
I didn't know you anthony, but you changed my life. I travelled the world...because of you. I experienced so many things...because of you. I suffered depression. Watching you gave me drive to explore and experience. You saved my life. Thank you. I will miss you

Eric seems like a really good friend. I just watched the Cook's Tour where they ate at The French Laundry and then I saw this and was like, "heyyyy!"

Realistically Anthony probably should have been totally sober after rehab. Alcohol is a depressant. Who know what could have been. RIP Anthony. What a great friend Eric was.
I'm so sorry for his friend Ripert. The whole thing is so sad.
Really cool seeing these guys interact. A little bit of Yin and yang happening here - like all terrific friendships. Eric touches on the "real" bourdain. The camera never lies? Well, yeah it kinda does. Nobody knew the real T except himself, and that's the same for everyone. On camera, off camera. We never truly know our significant others. We get a glimpse, but never the whole story.

Your relationship with Anthony was always my highlight of all his shows as you areso different but yet so the same. His freedom from caring about what others thought is what makes him a true artist
He was talking about his past , wasn’t he slowly admitting that he could have done better also as a cook , was not he impressed by all the famous chefs though they were all worshipping him. He had an inferiority complex and thought he wasn’t t worth all this success. He loved friendship , wine and food , how did he stay so slim. A wonderful human being , his roots and America, his inner struggles and his huge honesty. A hippy who travelled the world , listen to what he is saying.
I dont consider him a hippy, hippies were a decade before. He did think himself an excellent chief, self deprecating to that point. I do not think he suicided, I think his deprecation of a powerful social and political cabal took him.

So sad and sorry to hear he took his life. Disbelief set in. He must have received a terminal diagnosis and so he ended life on his terms. It appears I was wrong and depression played a roll. So sorry we lost him. Even more, so sorry his daughter lost him.
