    The reason why rendang usually need a long time to cook, it's because we need time to tenderize the meat (we used rather tough parts of a beef) and to cook it until the sauce is dry.

      Yes! This is what I was going to say! Rendang is a great way to use cheap, fatty cuts of beef (or goat but that's not readily available in my country)

    Speaking from personal experience, a 3 hour chicken rendang would just turned the chicken into a mush/floss (which still taste great 😅). The beef rendang took 3+ hour because the meat are usually a particularly tough part (traditionally rump/brisket) and very similar in cooking style to how american slow cooked brisket are.
    Edit : that looks legit tho, I'd totally eat it

    As 1/3 minang and having a bunch of minang friends. There's two kind of "rendang", Kalio and Rendang. The most commonly associated as rendang in most people minds are actually called Kalio, which isn't as thick as what the minang would consider to be rendang.
    A proper rendang would have it's, for a lack of a better term, sauce heavily reduced to the point where it's extremely thick and more paste like. But that being said most minang i know, while could get extremely semantic about it, are just glad that people like rendang. No matter which one.

      @bathory harker of course the flavours matters, but the outcome will be different with how long you cooked it.
      If you cook the Randang ingredients, and only cook it less than an hour, it will be called Gulai instead. Watery and the colour is orange rather than dark.
      Cook it lil' bit longer, the colour became darker, but still have liquid consistency, and it was called Kalio
      Cook it more, the colour will be dark and the sauce is more dry and compact, that will be called Rendang

      ​@@houseofbathoryThe recipe for kalio and rendang are the same but the flavor actually changes with the technique too. Traditionally Minangkabau rendang is cooked until the coconut milk dried out leaving less water/moisture and making it taste smoky and more intense

      You should go on a food tour in Malaysia/Singapore. Indonesia is quite large and doesn't have good transportation infrastructure so it's a lot harder to find good food in such a limited amount of time here. (especially if you just stay in Jakarta, the food there is never as good as the provinces they originated from)

    As someone who lives near West Sumatra (rendang's place of origin) what you cook there is what they call "Kalio" which the broth is reduced and has a slightly dark brown colour and that is the middle between gulai(still has lots of broth, lighter in colour like yellowish because of the tumeric and not reduced as much) and rendang(broth has tuned into some kind of dark dry concentration form of it) but what you cook there looks good

    authentic beef rendang could take up until 4 hrs of cooking. chicken rendang doesn't take up too much time or it'll turn mushy. if you ever visit Indonesia, you will know a restaurant sell them if you can smell the strong rendang aroma even from the outside. it's the best thing ever. they usually sell them in Padang restaurant and they serve a variety of Padang culinary. so mouthwatering.

    Actually that can be rendang if u cook it for hours, thats for dry the water content out of the meal and tenderise the meat as we tend to use the hardest part of the beef.
    In general we never use chicken nor fish as they tend to crush on the proses.
    What you make is technically Gulai or Kalio.
    In general are the same ingredients but different time to cook.
    Gulai = lightest of all.
    Kalio = more tick texture yet still bit light
    Rendang = the coconut oil already separated from the rest and start getting dry. In this stage you have 2 versions Rendang basah when u still have like a sauce and rendang kering when is completely dry and can last for a few months (in early times rendang was eaten by sailors as last longer)

    there is three stages of rendang making, first it called curry or gulai, second it called kaleo which means the water content are reduced 50% and the last step is rendang which means dried gravy.

    You should use beef, and you should cook the spices and coconut milk first and then cook it with the meat
    And eat it not with broccoli but just rice and beef
    And when making rendang, you should use thick coconut milk and liquid coconut milk

    Fun fact: while we knew we often called this dish as "rendang", its actually a cooking technique derived from "randang" which basically mean "cooking it with coconut milk until its dry". Because traditional rendang would take hours or even a whole day to cook one because not only its to tenderize the meat, the coconut milk being cooked as well would give it its signature look.
    But there are many instant seasonings for rendang as well in Indonesia although it might not be as good as your the rendang you'll find in specific restaurant which usually serves Padang cuisine.
    Next time try using meat instead! Its more common to use meat rather than chicken, but just to be a bit more authentic at least lmao. (You have to boil it first though so it can be at least tender)

      Chicken would still be considered authentic though, I believe. Because rendang is not a protein specific dish. You could have randang lokan (shellfish rendang), randang ayam (chicken rendang), randang baluik (eel rendang), randang itiak (duck rendang), randang talua (egg rendang, also there's randang talua that refers to chips like snack), or even randang cubadak (jackfruit rendang)

    I mean, if you use lean meat such as topside yes it will take hours for the spice to permeate into the meat and to tenderise the meat, which is what original rendang recipe use

    Hello there. Greeting from Malaysia. You can visit either Indonesia or Malaysia to get the original taste of Rendang. The authentic one. Because Rendang maybe look similar. But actually it have really different taste. If in Malaysia ,a lot of traditional rendang differ from each state.Maybe you can start planning to visit both country.

    Jeane, Chicken rendang definitely cooked in tens of minutes, while beef or mutton are the one to cooked for hours, because we almost never tenderize it with like pineapple juice, if we cook in one hour it still stiff, so we pour coconut milk every half an hour or so and cook it for 3-5 hrs
    Essentially beef rendang has so much fat and oil in it, but chicken rendang is like "we want to eat rendang but either cannot afford beef or just for the taste"

    I mean, at Indonesian traditional market there are usually spice vendors who sell homemade versions of those spice kit. We use spice kits too, not all of us are savvy with the mortar and pestle and we're not gonna let that stop us from a good pot of gulai or rendang.

    My wife and I use kits here in Australia called Spice Tailor, and they usually turn out impressively delicious. Dry spices and herbs are packaged separately from the sauces, and everything tastes really good. Oh and it's similarly easy (a must with nutcase kids running around all the time)

    For chicken, I usually cook it 30 minutes to an hour is usually enough since it is not as tough as beef, so that amount of time is fine. That looks really good though!

    For chicken you really only need 20-30 minutes MAX. Even 30 minutes is pushing it since chicken meat is already very soft. Different case if you use free ranged chicken which generally chewier and harder but got stronger chicken flavor. It might be fine to cook it at MAX 45 minutes. One hour is pushing it too far since the chicken would just be mushy by then. Beef and chicken are two whole different cases to cook.

    It depends. I don't handle spicy foods at all and I'm allergic to coconut. I have bought similar products like a butter chicken spice paste, which worked well for me. I just need to read ingredients and spice levels. I can handle mild salsa but most medium salsas are too spicy.

    Rendang with chicken can be cook easily with that stuff, but for Beef Rendang... It'll take hours or some traditional took whole night to cook because beef need time to get a soft texture

    You really don't need to cook it for long if the protein is already tender.
    It looks pretty well, though I expect the entire "sauce" to be more thick... Somewhat like a Gumbo. But I can absolutely eat that no problem
    Also, Try using Cassava Leaves after intense amount of washing and two part boiling one day, would pair better than with Broccoli

    Rendang originally is a food made to be served for a lot of people and the process might took hours, so instant sauce packages like this is quite helpful if you just eating by yourself.

    Sauce/spice kits rule! I am the type to become so focused on my studies that I forget to take care of myself and these always help me. They let me focus on preparing nutritious veggies and fresh protein to go with my meal. They also help me find sauces that I will someday want to learn to make myself.

    Rendang traditionally is after the coconut milk mixture (forgot the specific name) is dried out and the color turned darken not brownish. If it's still brownish and still has watery coconut milk mixture, it's called Kalio. After you reheat the Kalio to dried out it then it will be called Rendang.
    FYI, most restaurants that serve rendang usually serve Kalio.

    Rendang is more of a really hard beef. U have to cook it for a long time to become tender. Try shoving some spices + beef in a slow cooker for half a day, trust me.

    For me as Indonesian, it doesn't look like " rendang " generally, but it looks more like " kalio ", cause here the rendang has typical and textures is dry and oily a bit, meanwhile " kalio " it is like in the videos and it's kinda like gravy and curry.
