My husband was a die hard charcoal grill man to his dying day. He said that gas grills altered the taste of the food in a way he didn't like while charcoal enhanced. I don't really care personally but I always found his loyalty to Coleman adorable. 😂❤

Watched the video Thursday, prepared the dough on Friday, and baked the buns today. Hot dog, they were good! Such wonderful flavor and texture. I made beer brats and used Inglehoffer Sweet Hot and caramelized onions for toppings . Thanks, Claire Bear.
I love how Claire can make a sophisticated thing like an authentic croissant from scratch, but then also enjoys the simple pleasures like a hotdog. They are also one of my favourite things.
I love making hot dog buns! I usually use my bread machine to make my dough, because my stand mixer lives in storage. The Tangzhong is something I've only put in Japanese milk bread, but this makes so much sense to stay soft and moist if I'm not eating them all at once.
These look amazing! I love how you break down the recipes and truly make all of them one of a kind! I’ve tried so many of your bread recipes and I can really tell the difference in each one. Follow up: made these buns today but used them for "lobster" (actually chunks of Argentine Red Shrimp-cheaper and similar flavor) rolls. A+, would recommend. Normal buns are a forgettable part of a dish like this. These buns stand out, in a damn good way.
For every formed bun/roll (and pizza doughs as well, I make three at a time), I use the method Claire taught for her NYT Bagels video. Mix/knead the dough (I typically use the dough setting on my bread machine for this part), first rise, form the individual buns/rolls, set out on a sheet pan and cover with plastic wrap followed by a wet dish towel (I love this part, keeps the plastic wrap from flying all over the place) then put the whole thing in the refrigerator for a day or two. Then I let it sit on the counter for an hour or two and bake. I'm absolutely doing this here! I'm extremely lucky to have a second refrigerator in my basement where I have plenty of room for this.
Made these today for my family before going to an outdoor play, and my gosh, they were delicious!! My parents were in love with them! They're so pillowy and soft and so easy to make! I don't think we will be buying store buns anymore!😂
I made the recipe today with adjustments (just me and my kid, so halved the ingredients. My mixer is buried and my current kitchen is very small, so, I hand mixed. Skipped the egg wash.) My five rolls were great. Thank you.🙏
Claire, you should try the two-step method for hotdogs: poach them in 150° water for approximately 10 minutes until they’re 155° and then flash grill them for some color. They come out perfect!
One little smidge of advice for the barbecue, pile the charcoal on one side (Weber 'Qs have an accessory that helps with this), so that way you can do indirect cooking on the opposite side from the coals like in an oven, and hot and fast grilling over the coals to get a nice sear on things, you can even bake things in there too so could have the buns and meats all cooked under one lid... :)
We've long enjoyed King Arthur's pancake recipe, they also have a call line to help with their recipes, from my recollection. The company is also interesting because they're a co-op business (meaning everyone who works there has a fairly similar stake in the business).

I needed this recipe a month ago. I wish I had found it. I went with King Arthur’s which were dry with too tight a crumb. I should have gone Tangzhong straight away. That’s on me.
Are you telling me that you DON'T butter the sides of the bun and grill them??? It makes a grilled-cheese-like buttery crunchy crust which is so delicious! Try it!! :)
