No one has God in a box or a package or an institution, no matter what they desperately claim. Jordan Peterson makes total sense and is totally in line with the mystical/contemplative tradition. As long as you don't try and define God as whatever fits with your world view and are willing to do the research then that's fair. The big problem with your view is it often leads to defining God as whatever I want God to be which is God being made in man's image and not the other way around.
That struck a chord when he mentioned the dogmatic need for certainty in order to function in the world. I realise I need to be more comfortable with mystery and uncertainty. I'm reminded of the beautiful words of the Austrian poet Rilke: "Be patient toward all that is unsolved in your heart and try to love the questions themselves, like locked rooms and like books that are now written in a very foreign tongue. Do not now seek the answers, which cannot be given you because you would not be able to live them. And the point is, to live everything. Live the questions now. Perhaps you will then gradually, without noticing it, live along some distant day into the answer."
For someone who is uncertain about the certainty of others. You sound very confident that your position is true and you are doing the right thing. How do you know God presents himself in this multitude of ways? Have you not become orthodox in a different way? I have tried to listen to this heretic on many occasions. There are some who say God can be found in many different places, religions, people and so forth because God is love. Where there is love, there is God. This raises the question, if God is love, yet we cannot know if God really exists, does this mean we cannot know if love really exists? If we can know that love really exists, does love prove God exists? If God is love and love exists, does the existence of love then prove the existence of God, if God is love?
I don't believe in god, but this wouldn't be the base. It would only be the case if love only existed in so far as a god existed. God being love doesn't mean that only god is love.

What are your thoughts on morality itself, is it objective or subjective. (Even if morality is objective, because of mathematical Incompleteness theorem it's impossible to know the whole scope of something) [also sorry if my question seems gauge and surface level. I'm a engineering student and I'm trying to challenge what I know myself and this field a bit outside my comfort zone]

As a former Christian and a spiritual seeker, I came to realize that God was just a symbol, a mental image, of Nature, Reality and Awareness, and the Universe. There is no creator God who is separate from the world and Cosmos. Creator and Creation is a result of Dualistic Thinking. Stilling the mind through meditation practice/mind training, one is able to go beyond thinking and duality. We are aspects of the Universe in this temporary physical form, composed of the six elements, being aware if itself, experiencing itself. In the stillness of meditation, one is in touch with the timeless dimension of the Universe - no beginning and no ending, always was and always will be. The Big Bang is just a theory. However, you're free to believe what you wish to believe. Be well, be peaceful, be happy. The 4 Sublime states - loving kindness, compassion, sympathetic joy, and equanimity.

Anyone can practice mindfulness because it has nothing to do with your religious beliefs. Also study the Dharma that the Buddha discovered. Dharma means the way things are; the laws of nature and the human condition: human experience, consciousness, suffering and conflict. The Buddha was a healer of people's mental-emotional problems and he wanted people to question and investigate and not to follow religious or spiritual authority blindly. He was very radical and profound. Many westerners are following this path because of this freedom to question and investigate. Self-understanding and wisdom leads to compassion, peace and contentment. Jesus taught the same spiritual values as the Buddha - loving kindness, compassion, forgiveness, patience, brotherhood, calmness and peace. There are videos available, of course.
