i counted all my items and only got 101 (the only item i don't have is apple pie). i don't know what could possibly be the 103rd item, but the items page on wiki says there are only 102 items currently.
i can confirm that there are 103 items, as i have 103. my tip is: check the item, even if you think you already have it. because my last item (before the balance patch) was a cherry, (somehow) which i thought i already had, but i checked, and turns out i didn’t. good luck on finding that one item.

@@ravioli_500learn timings, you can practice in the guru on your main file. if you're good at using sword with ante up, i recommend you get a knight build, and power stab hatred till he dies. you'll need: -iron sword -ante up -power stab -knight and that's it! you should do 7 damage per power stab. if you hit every single attack, you'll kill hatred before you even need to ghost potion.

sacrifice+? it was my last card. but here's what you could do: scroll through all the cards on the wiki, and check if you have them or not 1 by 1. it'll take a while, but this way you will definitely find your last card.

item collection was added in demo 3 not in demo 2 (if i’m wrong, demo 3 has an updated item inventory)

there is a 33% chance that when they have the card and you beat them you actually get it
67% chance you will not get the card
