    Thank you so much Dr. Fuhrman, for sharing helpful cooking tips like this. So that we know, we don’t have to depend upon oil, frying, and deep long cooking to prepare our foods. Learning to keep as much nutrition as possible in our foods is literally life saving. It is a true skill to know this as you mentioned.

    I love using my slow cooker, but I do add some veggies toward the end of cooking time so they don’t get mushy.

    Doc (or anyone who read this and kind enough to answer with clear evidence backed by science), the duration of cooking time is clear, but when you say cook for 3,4, or any minutes, when to turn on the timer?
    In steaming case, is it when the water started boiling?
    And in case of using wok, do we turn on the timer when we throw in the veggies on a preheated wok or not? Thanks before ❤

      Turn the timer on when the vegetables begin to cook. On a preheated / presteamed steamer or cooking surface

    check stability of vitamins on wikipedia
    most are not heat stable, so u always inevitably lose (some) nutritional value already on that front

    I wonder if microwaving cruciferous vegetables destroys the myrosinase/ITCs.

      Try to avoid flour for a period of time. Bread, pasta, pizza, etc. I guess one month is enough to see if this helps.

    The only frying I do is in the air fryer

      Air fryers cause foods to become crisp which forms acrylamides.
      The International Agency for Research on Cancer (IARC) classifies acrylamide as a “probable human carcinogen.”
      The US National Toxicology Program (NTP) has classified acrylamide as “reasonably anticipated to be a human carcinogen.”
      The US Environmental Protection Agency (EPA) classifies acrylamide as “likely to be carcinogenic to humans.”

    Why is chocolate being used instead of carob ?

      Good question, I also wonder. Maybe because people are more comfortable eating a chocolate dessert than a carob one.
      But I'd say that carob is better.
