  • Hey guys, for my cousin's 16th birthday, I've cooked one of his favorite Filipino food, Adobo! My grandma and uncle also tries Adobo for the first time in the video. And me, my sister and my parents just casually enjoyed Adobo as we always did. :D Hope you guys enjoy!!

    Back in college I have a ton of korean classmates, like literally almost half of the class are Koreans. I got to know them well became friends, and even went to their houses, their Parents were very warm to welcome us and cook Authentic Korean foods!!! They were so good in Filipino too, I remember that yeah most of them Likes Adobo, Sinigang, and Mang Inasal 😂

    Hi Jessica. to cook thw authentic Pinoy adobo, you need to marinate the pork or chicken overnight in 1 part soy sauce, 1 part vinegar, and 1 part water with minced fresh garlic, laurel and peppercorns. Aome add sugar just to balance the taste. The following day, you need to fry them first, then pour the marinade in and allow to simmer until the sauce has reduced and slightly thickens. Some add boiled eggs, some add potatoes., depending on which rehion in the Philippines. Others allow the meat to simmer until tender in the marindae, then takes out the sauce and pour some cooking oil to brown the meat, then add the marinade in again. Different styles, but typically the same taste. Adding onions allow a big difference from the authentic adobo, which is just garlic, laurel, and peppercorns. I love watching your channel because even as you are already in a different country with a totally different culture, you still try so hard to connect to your roots in the Philippines.     The leftover Adobo sauce can be used for making Adobo Rice!!! Fried rice mixed with Adobo sauce! Yum! It's been more than ten years since I moved back to Japan after working in the Philipines but I still do cook Adobo, sinigang and lumpiang shanghai here! 😁
    PS. I worked in ADB and lived in Ortigas. I miss roaming around that area especially in Podium, St. Francis and Megamall. Haay. I miss eating at a small eatery beside St. Francis near a terminal. They also sell balut there. 😁

    Just wanted to share. When I went to Germany and Belgium for my studies, home Filipino cooking is what I really missed.
    I tried making Tinola using these alternatives: for green papaya alternative I used large cucumbers. Peeled off and seeds removed.
    For the chili leaves ( which is really difficult to find) I used spinach as an alternative. I used one de-seeded and washed small chili to give the broth tinge of caspsicum flavor which you usually taste from the green chilies that is used for it.
    My other Filipino friends were delighted and surprised where I got my ingredients. I hope you could try this.

    I love this episode, it was super chill and satisfying. Kinda like a day in a life type of vlog but without a strong subject or topic.
    Also gotta give props to the editing, it gets better every time.. The way the texts appear in the screen is not overwhelming but still gives aesthetic feels and I like how it appears color-coded whenever one's talking. The lo-fi jazz background music also complimented the whole video (props to that, superrr chill).
    The entirety of this video gives viewers the feeling of taking a stroll with you (at least that's what I felt). I also love how it's not just you that we see in this, it gives your channel a lot of character and effective storytelling. Keep it up!

    With Adobo, the sour aftertaste is what we call "raw vinegar." If you want avoid that, leave the dish to simmer for around 3-5 minutes after you add the vinegar. Don't mix it and don't cover it.

    Hi jessica can you cook Beef Caldereta - a type of beef stew-is a common Filipino dish that traditionally uses meat, tomato sauce, and sometimes veggies. To make a tastier vegan version of this classic recipe, I used seitan instead of beef and coconut milk to provide a little creaminess.
    BEEF KALDERETA
    1 kilogram mock beef or seitan cut into medium-size cubes
    3 Tbsp. canola oil
    2 medium-size red onions, minced
    4 cloves garlic, crushed
    1/2 tsp. crushed black pepper
    1/4 tsp. crushed dried chili
    2 carrots, cut into half-inch cubes
    1/2 kilogram potatoes, cut into 1-inch cubes
    1 large green bell pepper, seeded and cut into strips
    1 large red bell pepper, seeded and cut into strips
    2 cups coconut milk
    1/2 cup tomato sauce
    1/4 cup soy sauce
    Soy sauce, to taste
    2 Tbsp. potato starch dissolved in 1/4 cup water
    .If you are using gluten-based mock beef, wash the mock beef well, removing the starchy residue on the outside. Squeeze to remove excess water. Slice the mock beef into half-inch-thick strips. Marinate in soy sauce overnight.
    Heat oil in a wok. Stir in the onions and sauté until transparent. Add the garlic and saute until golden brown.
    Add the black pepper, dried chili, carrots, and potatoes and stir-fry for 2 minutes. Add the mock beef and bell peppers and stir-fry for 3 minutes.
    Slowly pour in the coconut milk, bring to a boil, and cook on high for 3 minutes. Add the tomato sauce and soy sauce, bring to a second boil, and cook on high for 1 minute.
    Add more soy sauce if desired. Slowly pour in the potato starch one teaspoon at a time until the sauce acquires the desired thickness.

    If yuu're planning to cook tinola in korea there are some substitutes I think they sell chilly leaves in korea i lived in korea for 20 years and i found chilly leaves in some old markets not in super markets and instead of sayote or papaya you could substitute it with korean raddish or 모 then chicken
    I even tried to make a replica of the filipino taho (i used 선도보)and fishball&kikiam(i used 어목 for fishballs&어댕 for kikiam) and as long as you know how to make the sauce for each it will be fine and likewise the sugar syrup for the taho just burn about 2 table spoon of sugar in a sauce pan untuil it melt then put about 2-3 table spoon of water until it turn into syrup then drop of vanilla syrup for flavoring or cinamon if you want the fishball sauce is just a simple adobo sauce could do

    Thanks for loving our very own adobo, you got me there. Try to marinate first pork with soy sauce, a little bit of vinegar, minced garlic, onions, laurel leaves, ground pepper and pineapple juice for an hour. Then after so you can start cooking your potatos on a separate pan with garlic, onions and then add the marinated pork on it. Simmer till tender then add pineapple chunks that would help balance the saltiness. It's just so savory. Would love to see you trying this method, hope you like it!

      thats one way to level up the adobo, also instead of using white sugar, try the brown sugar its a lot better.. and add banana blossoms also (i bet its hard to find this in Korea)

    Mam jessica.. i just want to share.. try to make it dry all the ingredient then wait the soy sauce stick in to the meat and the oil comes out..it makes the meat and the sauce more flavorful... After that add few water and semmir it until its tender.. tips its should more salty,sweet and spicy.. few sour only hehe..

      Jessican can make Tinola in Korea. She can replace the chili leaves with moringa/malunggay and green papaya with chayote. We do that.

    Way of cooking adobo (Although there's no standard way of cooking it but this is the common way).
    1. Saute (gisahin) the garlic and onion together is a pan with enough oil to saute it. It depends on you if how many cloves of garlic do you want but the ideal was 4 cloves of garlic, chop it depending on your preference and 1 onion (either white onion or the red onion). Saute it for about 30 Seconds - 1 minute or at least the garlic was golden-brown color.
    2. Add the chopped pork (either pork ribs, any part of the pork that you've chosen. It's up to you girl😊). Stir/saute it together with garlic and onion that you've saute a while ago. Let it simmer until the natural oil from the pork was released or until you see that the pork meat was already color brown or grayish color indicating that it's already cooked.
    3. Add 1 cup of water or depending how much of pork meat did you cooked and also depending how you want to cook adobo, either it has a lot of sauce, or just enough sauce to pour on your rice, or a little dried out, It's up to you. Also add 1 teaspoon of ground black pepper or it depends on you if you want a little spicy or just enough to smell the aroma of black pepper and also add the "laurel" or "Bay leafs" or "Black pepper's leaf" to add more aroma. Let it simmer for 5-10 minutes or until you're satisfied with the level of your sauce. It depends on you again. HAHAHA
    4. After simmering it or until you're satisfied with the water/sauce. Add soy sauce, just enough amount and not too much to avoid too salty taste. Just enough amount that you want. Let it simmer for 2-3 minutes so that the soy sauce was cooked and absorbed by the meat. Add enough amount of vinegar but then again not to much so that it will never too sour and when you add vinegar DON'T EVER try to stir it after putting vinegar into it because it will become more sour, just let it simmer or boiled for about couple of minutes before stirring it to avoid too much sour taste.
    5. You can add MSG such as magic sarap and ginasa mix depending on your choice. Let it simmer for 1 minute enough to dissolve the granules of MSG.
    6. Add sugar. Again, it depends on you if you want it too sweet, just enough to lessen that salty taste, or a little sweeter. If you're satisfied with the salty, sour, sweet taste, and the sauce is good enough for your preference then it's done.!
    Again, it depends on you on how you're going to cook your adobo recipe since we're not all the same. The important thing is your happy on what you are doing. This is just a suggestion and I'm happy to share my way of cooking adobo as a Filipino. keep safe and always be happy😊🇵🇭❤🇰🇷

      Nah.. its just a different style of cooking... I put a lot of bay leaves and put it in the beginning of cooking too. 👍🏼 Tastes better in my personal opinion.

    This is the dish that a Filipino neighbor shared with me when my family moved into a new house in America. And then we moved to another location and another Filipino neighbor shared pancit and Adobo. So I had to reply back with some kimchi and bulgogi. Filipinos love to share. Well, at least when I was living in America. Filipinos are very friendly.

    I'm a Filipino and my advice for you when cooking adobo is when you are putting vinegar you should not stir it let it boil atleast a minute so that it will not taste sour. Just a friendly advice but I'm so happy you guys love adobo.

    Chopping the onion finely, fry the garlic first then add the meat, adding water and simmering it will make the meat tender. Just some little ideas you can do to make your adobo recipe better.

    Get a casserole or pot and bring it up to medium heat before pouring in the oil. Drop in the onions, garlic and ginger and sauté slowly for about 2 minutes or until you can smell the lovely aroma of the thoroughly cooked vegetables.

    It’s time to drop in those chicken pieces and stir until it turns white in color.

    Pour in the water and throw in your Knorr Chicken Broth cubes. Bring this to a simmer until chicken is tender and cooked through.

    You can now add your sayote or green papaya and cook until tender.
    5
    Dahon ng sili is added at the last stage to ensure leaves (and nutrients) don’t dry up. Give this a minute then it is done. Malunggay is also another healthy alternative because it is packed with vitamins and minerals which are good for nursing moms and kids as well.

    Enjoy this with patis and calamansi on the side. See the faces of your whole family light up as you bring this to the table.
    1 tbsp cooking oil
    1 pc onion, small -sized, chopped
    2 cloves garlic, chopped
    1 (2 - inch) pc ginger, cut into strips
    1/2 kilo chicken, cut into 8 pcs
    1 liter water
    2 pcs Knorr Chicken Cube
    1 pc sayote or 1 pc small -sized green papaya, sliced
    2 stalks dahon ng malunggay (moringa leaves)

    @Jessica Lee try this style of mine cooking adobo and surely you will like it more. Put the pork, vinegar, soy sauce, minced garlic and dried basil leaves. Add more water until the pork meat becomes tender. Once its tender remove the soup leaving only the meat in the fry pan. Set aside the meat and pour some oil. Fry some crushed garlic until golden brown and saute along with the meat until it becomes brown. Then pour again the soup. Let it simmer and done on the 1st boil. By the way, adding 2 pcs of red chilli (labuyo) while sauteing the meat and garlic will add up to the flavor! Enjoy! Try this please! Im sure you will thank me!

    I came across your vlogs after my vacation in the Phils (for the first time in 20 years) and noticed the influx of foreigners (particularly Koreans). Needless to say I had a great time. Anyway seeing your vlogs reminds me of my childhood and particularly this video. Made me jump off the couch and straight to Costco to buy that meat to make adobo.

    Tinola is one of the easiest just like adobo. Sauté chopped garlic, onion, lots of sliced ginger(1/3 cup or more), cut up chicken, salt, pepper, and fish sauce (optional). Add water almost to the level of chicken, cover while cooking. When chicken is cooked, add cut up green papaya or chayote, continue to cook until tender. I don’t put chili leaves, only lots of chili .

      I'm Filipino but raised in California and we call this game 13. I know how to play the Filipino way (Pusoy Dos), the Vietnamese way, and also the Chinese way. They're all very similar that I always confuse which is which.

    this is just a tip when your cooking adobo it's better if you soak the pork in vinegar and soy sauce in a bowl with the other spices so that the meat is more tasty the more it sips the sauce and use the mixture(vinegar and soy sauce) where you marinated the pork as the sauce of your adobo and it will taste a bit more preserved like it will taste more tasty
    This was just my opinion I'm not actually offending anyone and if you think I know how to cook but sorry I don't it's just I always like to see what my mother is cooking cuz my mom cooks everyday so I'd like to see and I saw how she prepared for adobo just saying so I hope no one will get angry with my comment

      Sis same. Putting sugar in food is very tagalog way of cooking. Here in Mindanao we like our ulam to be in salty side, or maasim if it's Sinigang. We like sweets to stay in dessert side.

      I am not a foody but putting sugar on ADOBO is just to balance out the saltiness of the soy sauce I assure you it will not make the ADOBO sweet.

      @@papadwightramosytv2974 no we use "Leyte Calamay" cause kalamay in other regions are different ours is like before it becomes a sugar or moscovado sugar it is Calamay first I think. It is less sweet and it is natural cause it is not processed. But in other regions they do use pineapple or sprite. It just depends on the region I guess? But i am not sure lol

    a little trick i like to do is to cook with cane vinegar instead of white vinegar, and use brown sugar instead of white, then when everything is cooked i turn off the heat and add a dash of white vinegar to the dish before giving it a mix and serving, the additional vinegar at the end will give it the classic salty sweet sourness that adobo is known for. edit: cooking vinegar caramelizes the acetic acid in the vinegar as it transitions into glucose during the cooking process, which is why i always add a little bit of fresh vinegar at the end to help it regain its "vigor".
