Great video breakdown. I have a question pertaining to the usda inspection at the butcher. Is the meat considered usda inspected after the animal is dispatched and cleaned? Or after the meat has been processed down the individual cuts?
Good question, the best answers would come from the bearded butcher channel. They are full of great info! However, our limited research says USDA inspections are for slaughter beef health prior to dispatch and subsequent butchering.
May i ask out of interest if there's any differences between red and black angus in any ways. Not just meat but the reasons that you prefer to keep them 😊

@ I appreciate the response, from what little I’ve seen of the bearded butcher they seem very knowledgeable.
