Had the opportunity to target White Sturgeon in the San Francisco Bay Area with Captain Steve. We fished from 8-3 and maybe had 2-3 bites. Luckily we were able to stick one fish and land it in the boat. This was my first sturgeon ever and while it may not be the only one I catch, it will more than likely be the only one I keep.

Edit: last summer I was able to catch and cook Mahi-mahi off the coast of Costa Rica and I can confirm that it is indeed wayyyyyy better. Probably the best food I have ever had and I fucking love food. Makes me wanna become a fisherman.

Caught my sturgeon on the Columbus River in Oregon.. It was a 7 footer the guide had caught twice before me identified by an odd scar on its face. Definitely a once in a lifetime thing for a novice like myself .

Always leary about keeping sturgeon. Seeing the greens dwindle and the Baikals overfished for caviar, it's hard to see these ancient beauties taken. However, props for going over the proper regs and tagging procedures. Awesome catch man!
You are correct. People are idiots who keep ANYTHING under 60" and should only be allowed 1-2 per YEAR! If you look up how long it takes a sturgeon to even start to lay eggs you would understand what I'm saying. These guys are huge assholes for doing this. No responsibility....no respect!! Fuck them!
Ats all right, pollution or global climate change will kill em soon enough... Took about a decade to kill all the smallmourh in a river I used to fish... Runoff from the vineyards and silt from the banks destroyed the fishery . 70 years ago, it was populated with large quantities of sturgeon... Massive abalone die offs along the coast here, supposedly from increased water temp killing the kelp

Usually, sturgeon very active between May and June and next wave between September and beginning of October.
Spinal cord you can cooking too. My father use to boil it in the water (Back in Russia), for few minutes and then you ground it trough meat grounder, add boul eggs and green onion, mix with mayo and good to go as salad or as spread on your bread.

In bc canada... Theres no retention on fraser river white sturgeon anymore .. Used to be and they were pretty tasty... But if u want a battle .. Look no further than the fraser river... 6ft fish on the regular... On numerous baits aswell ... So. If youre ever up this way ... Hit me up .. Ill give you a tour of the mighty fraser... The BEST salmon I ever had was two hours after catching silver salmon camping. Butter and onions and brown sugar. Wrapped in foil cooked for just a couple minutes a side. Sometimes with chicken giblets...Kenai Alaska. Spent my last money on a fishing pole, license, and Kenai river flies. Had a bus ticket to get home. I gained weight that trip.
I live about 8 minutes from that place, I usually catch shovel nose and leopard sharks when I fish in the San Fran Bay. Didnt know we can catch Sturgeon. Might stay local now instead of running to Halfmoon Bay every other week. Lol

Just a tip for cooking Sturgeon, if you're grilling or flash frying, its better to pre cook it in an oven for 20 minuted first. It really tenses up if you put it straight to a grill, better to slow cook it. Its actually perfect to eat raw as its such a refined flavour. Its lovely as sushimi with a bit of grated red onion and capers. My favourite way is marinated in red wine vinegar, poached with shallots, then finish fried with butter, thyme, and capers. Despite its dinosaur looks, its a delicate fish to eat bizarrely and tastes phenomenally good when cooked a bit more delicately rather than bold flavours. Im sure that marinade tasted great though! Id just pre cook it before grilling, and youll keep it nice and succulent/flakey, rather than meaty and dense.

FYI: White sturgeons are not rare. In CA, they can only be legally kept if they are between 40”-60” only. Now however, green sturgeons are rare & endangered and may not be kept.
Many people may disagree with me but i simply don’t like the idea of the legendary being caught and cooked. Catch and release only. The one in this video looks pretty small also
Conservation also means keeping the population in check. If the population isn’t kept in check then the species will suffer regardless.

For those wondering:
The recreational fishery for white sturgeon (Acipenser transmontanus) remains open year-round. The daily bag and possession limit is one fish that must be between 40 inches and 60 inches fork length. The annual limit is three (3) sturgeon per person. Short or oversized sturgeon must be released unharmed immediately; note that white sturgeon greater than 68 inches fork length may not be removed from the water prior to their immediate release. No snare may be used to assist in taking sturgeon. Only one single barbless hook may be used on a line to take sturgeon. The sturgeon must voluntarily take the bait or lure in its mouth. No sturgeon may be taken by trolling, snagging, or by the use of firearms. Sturgeon may not be gaffed, nor shall any person use any type of firearm to assist in landing or killing any sturgeon. Any person fishing for sturgeon shall have in their possession a non-transferable Sturgeon Fishing Report Card and complete it in accordance with California Code of Regulations Title 14, Section 27.90.

@@Sshooter444 They take many years (11-34 years) to reach sexual maturity and are almost extinct in BC compared to historic levels. Taking any of them would be extremely detrimental to survival.
