This recipe is AWESOME and not too hard to make HOWEVER, the thumbnail is the way I remember what a Parker House Roll was when I was a boy and I would like to know the technique on how to make the folded version!! Great recipe though!
Hi Anna. Rules of baking have some ratios of flour to water etc. This recipe uses more water than the 60% rule. Are rules meant to be broken? Are there any thumb rules you would suggest for baking ?
Anna, Can you show how to do the fold over Parker House rolls like your photo shows? I am having trouble getting them to stay folded over. I have to make 400 for a family reunion.
I always seem to have trouble getting my dough to come together. I measured this recipe, even checked the temperature of my water and milk. The dough never stuck to the dough hook and pulled away from the bowl. So, I added a bit more flour. I left it in my mixer for probably 10 minutes or longer... I finally just put it in a bowl to rise. Fingers crossed.
What is the best way to double this recipe? 18 rolls will be gone in 30 seconds at my family Christmas! I know with yeast recipes it isn't as simple as doubling the yeast. Much appreciated!!
The classic parker roll was done exactly the way u did it.... After baking there was no golden color even after an egg yolk wash.... Can u suggest ? Any tips ?
Glaring error! With 3 and 1/4 cups of flour the hydration is about 87%. Far too high and awkward to work with. With 4 and 1/4 cups of flour the hydation is about 66%, just right. Weigh in grams always.

You could put it In a ziplock baggie and when u warm it up put a damp paper towel on it
ORANGE DURAMAX I would freeze them. They would thaw out quickly enough, and then just put them in foil and warm them up in the oven.
I freeze mine so I haven’t noticed them going stale. Just take them out as you need them

1) 36.6° (body temp)
2) knead for 8-10 minutes, you will know when to stop

Hmm. Did the rolls bake up in the right amount of time? If they took longer maybe your oven is not at the correct temperature.
