Make Ahead Dinner Rolls | Great For Freezing Ingredients: 1 1/2 T Dry active yeast 2 cups warm water 105-110* 2 T sugar 2 eggs scant 1/4 cup sugar 6 cups all purpose flour 1 1/2 tsp salt 4 T oil Put in yeast, 2T of sugar and 2 cups of warm water in mixer and let sit for 10-15 minutes. Put in scant 1/4 cup of sugar then add the 2 eggs. Now add 6 cups of flour not packed! Add 1 1/2 tsp of salt and 4 T of oil. Mix on 2 until it needs more flour. Add 1/4 cup at a time as needed. After dough has pulled from sides knead on 2 for another 8-10 minutes. Take dough out and form into a ball. Oil the mixer bowl and put ball back in upside down then flip over. Cover and put in a warm place like your oven with the light on to rise for a hour to a 1 1/2 hours until it doubles in size. Punch down and knead a bit until air is out the form into balls and put on tray. Cover with wrap and put in freezer for a hour or so then put them in ziplock bags. When ready to use put them in a baking dish and leave on counter or in fridge until they double in size. Once doubled bake at 350* for about 20 minutes.
While running through You Tube trying to find a "comfortable" to use bread dough for freezing I found YOU! I haven't made bread or rolls for 30 years so I was super rusty. I watched your video and thought...I can do this! You explained it so well and the more I listened the more confident I felt. I made dinner rolls for Christmas dinner and were they a hit! My grandson ate 4! There wasn't one left of the 32 I made. Thank you so much for your time and clear explanation to make these delicious rolls. My courage is up so I'll be doing lots more in the near future. My family loves them and I love you!
I proof my yeast. Why ? I learned when I was 31 about proofing yeast when I worked at a military day care when ex was in navy. I worked in the kitchen. The head cook explained why. If you don’t proof and your bread does not rise ( killed yeast and I have accidentally ) you ruin whole batch. So like you I proof my yeast always. Love dinner rolls . TFS Your an awesome cook Renee.

I'm so glad you posted this. I have been using a bread machine for over 32 years. I have forgotten how to do all of this breadmaking. It's coming back to me. I will make some rolls to freeze. Thank you for this video.

Like you can buy, by bag, frozen. Now I have confidence from your lesson, how to prep for Thanksgiving. Thank you!!

Would you mind letting me know if this mixer is worth buying! Lots of bad reviews , speeds not working ect. Or not mixing to bottom of bowl? Be nice to have a heavy duty 5 - 6 cup flour mixer with ease. Does yours shake, rattle ? If you be so kind to answer.

I made these last night. I couldn't wait to try them so I went ahead and baked them. They were delicious! I am going to make a other batch tomorrow and freeze them. What if I wanna start the dough in the morning and use them that night.... can I stick them in the fridge immediately and just pull out to rise before baking
