- We were so busy seeing the sights and enjoying the Holiday Fun! We had both daughters and my beloved grand dog, Gracie here. My heart is FULL.

JENNIFER’S CINNAMON ROLLS
4 AND 1/2 CUPS ALL PURPOSE FLOUR
1 PACKAGE FAST-RISING ACTIVE DRY YEAST
2/3 CUP MILK
2/3 CUP WATER
1/2 CUP SUGAR
1/2 CUP COOKING OIL
1/2 TSP. SALT
2 EGG YOLKS (yolks only)
1/4 CUP BUTTER SOFTENED
1/3 CUP SUGAR
4 TSP. GROUND CINNAMON
1. IN A LARGE MIXING BOWL, COMBINE 2 CUPS FLOUR AND YEAST. IN A SMALL SAUCEPAN, COMBINE MILK, WATER, THE HALF CUP SUGAR, OIL AND SALT. STIR OVER MEDIUM HEAT UNTIL JUST WARM. (120-130 DEGREES F).
2. ADD MILK MIXTURE AND EGG YOLKS TO DRY MIXTURE. BEAT WITH A MIXER ON LOW TO MEDIUM SPEED FOR 30 SECONDS, SCARPING SIDES OF BOWL OFTEN. BEAT ON HIGH SPEED FOR THREE MINUTES. STIR IN THE REMAINING FLOUR.
3. TURN DOUGH OUT ONTO A FLOURED SURFACE. COVER AND LET REST FOR 10 MINUTES.
4. ROLL OUT DOUGH TO FORM A 14X12 INCH RECTANGLE. SPREAD WITH SOFTENED BUTTER. SPRINKLE WITH A MIXTURE OF 1/3 CUP SUGAR AND 4 TSP. CINNAMON.
5. ROLL UP, STARTING FROM LONG SIDE, INTO LOG. SLICE INTO 12 PIECES. PLACE IN GREASED 13X9X2 INCH BAKING PAN. (* we add a blop of strawberry or raspberry jam to the top center part of each roll, but this is not mandatory.) COVER/LET RISE IN WARM PLACE UNTIL NEARLY DOUBLED.
6. BAKE IN A 375 F DEGREE OVEN FOR 20 MINUTES OR UNTIL GOLDEN. COOL SLIGHTLY.
ICING (we don’t like cream cheese icing, but you do you)
2-3 CUPS POWDERED SUGAR
SOME MILK.
ADD MILK A TINY BIT AT A TIME TO THE POWDERED SUGAR UNTIL IT REACHES DESIRED ICING CONSISTENCY. I USE A WHISK. EITHER SPREAD OR DRIZZLE ONTO SLIGHTLY COOLED ROLLS. EITHER JUMP IN AND EAT WHILE STILL WARM (BEST WAY) OR LET THE ICING HARDEN AND COVER TO STORE UNTIL BREAKFAST.

We are here in Florida for 3 weeks. This week in Orlando. We walked around Disney Springs yesterday. I dropped some $$$ at Lily Pulitzer. My sister had recommended the Chef Paul’s restaurant so we ate there. Tomorrow we will go to Mass at the beautiful Queen of the Universe Church. Definitely going to the Animal Kingdom but rain forecast a lot. Happy 2024. God bless.

Out of all of our trips to the resorts for our vacations, Poly was our favorite

Enjoyed this video so much. It is so nice to see what all is available to do at Christmastime there in area near Disney. My sister and daddy and I were there in early December and got to see the GF gingerbread house. Your camera captured it so beautifully. Loved seeing you all have such a wonderful Christmas holiday with family. Grace was enjoying the wrapping paper too much!

We went to Disney in California in October, weather was perfect. When is best weather for Florida to visit Disney, we travel a long way 24 hour flight so we want to make sure it’s nice, no rain and not hot, is January best time? Thank you.
From my limited experience, September/October and February-April are the best. Lower crowds and great weather (especially Feb-April)!
