    • 3 gold sweet potatoes, peeled and cut into pieces
    • 4 garlic cloves, crushed
    • ½ cup olive oil
    • 1 tsp salt
    • 1 tsp pepper
    • 2 tbsp honey
    • 300g jar marinated feta
    • 1 tbsp olive oil
    • 1 cup plain Greek-style yogurt
    • 1 tsp finely grated lemon rind
    • Fresh mint leaves, for serving
    • Lemon wedges, for serving
    • Optional: balsamic glaze, for drizzling
    🍽️ Instructions:
    1. Prepare the Sweet Potatoes:
    Preheat your oven to 200°C (400°F). In a large bowl, toss the sweet potato pieces with crushed garlic, ½ cup olive oil, 1 tsp salt, 1 tsp pepper, and 2 tbsp honey.
    Spread the sweet potatoes on a baking tray lined with parchment paper. Roast in the oven for 30 minutes, or until tender and caramelized, turning halfway through.
    2. Make the Whipped Feta:
    In a blender or food processor, combine the marinated feta, 1 tbsp olive oil, plain Greek-style yogurt, and finely grated lemon rind. Blend until smooth and creamy.
    3. Assemble the Dish:
    Spread the whipped feta mixture on a serving plate. Arrange the roasted sweet potatoes on top of the whipped feta. Garnish with fresh mint leaves and lemon wedges.
