I live in Kentucky and grew up in the South. And the way we eat squash is with onion, salt and pepper, and caramelize it in a skillet with a little butter. Summer squash is so good

18:17 in case anyone is looking for another way to use zucchini, they make great pickles. I haven't had much luck growing cucumbers where I live but zucchini is easy. With the amount they produce I can make massive jars of pickles all year. Trick is to not cut them too thin. I also only do a quick canning method to avoid "cooking" them in a hot water bath so they stay crunchy. Taste just like cucumber pickles 👍
Love the Plants Only cookbook. The herb and caper sauce has become a staple. We were gifted with a case of Sophie's Kitchen "salmon" patties in June. This sauce elevates an already good product to sublime. I've even thinned the sauce with more lemon juice and served it over a dinner salad. I have all your cookbooks and when you publish the next one, I'll get that one too. ❤
Gaz, your next adventure in gardening should be seed saving from your own plants. Since they grew in your micro-climate they should produce even better for you next year. A great book on this is seed to seed. Cheers!

Try basil tea- it’s a game changer. I got the idea from watching roots and refuge farm. You boil down a bunch of basil, let it cool, and honey and lemon, and then drink cold. So refreshing and such a lovely summer essence to it.

Wow, the basil ice cream looks like it would be amazing. Basil is just a wonderful flavor and to have it in ice cream would be delicious with the waffle cone too. Oh this episode the recipe that spoke to my heart above the others, was the risotto with the summer squash. Wow I thoroughly enjoy risotto and summer squash, and the way that it was cooked looked absolutely divine. The squash had a nice bit of caramelization on it and the risotto looked excellent, it was not mushy or burned and aww it was all beautiful. I love the way you do your smashed potatoes with your version of fresh Herbs de Provence and your homemade ketchup. Potatoes are amazing and delicious. It’ll be good to see more potato recipes in the time ahead. As autumn comes around it starts to get into soup season and you have so many leafy greens and potatoes and other delicious veg that you could make a wonderful soup or stew. I enjoyed your clip of you planting the seeds on the banana peels, I didn’t know that that was a thing or could be done. It was good to learn something new and I appreciate your content. Your videos are always great quality and you and your team are excellent. 😊

I don't know if you get enough sunny days for a solar dehydrator. Build frames (2ft x 2 ft) 60 cm x 60 cm . Cover them with window screen. Stack the screens . A car in the sun with the windows cracked open can work , or a shelf system covered with greenhouse plastic also works. You need both heat and airflow to dry herbs. The shelf system should be slightly open at the bottom to let cooler air in and slightly open at the top to let the moist, hot air out. I dry all my herbs for winter!

Fantastic video. Potatoes are so under rated really yet extremely versatile as a vegetable and ingredient. I love growing them on our no dig allotment plot, so easy to grow even with potatoes from the kitchen that's chitted. The kids love growing them too as its like digging for treasure! Would be great to see you do a self seed video from veggies and fruits we can buy from supermarkets. We like growing peanuts (they need to be the ones in the money nut shells and not roasted)!. I love the yellow zuccini's. I am single but I make a lot of food and freeze it. I love making chili with lots of zuccini and then freezing it. My chili has lots of veg...not a typical one.
I've been dehydrating all of my basil but I found a recipe for basil and mint jelly that I think I may try. I did freeze some pesto cubes too. I love your enthusiasm. It really makes the day a bit better. Well done!

If I had to live on one vegetable, it would be potatoes. So versatile, so satisfying. We have a wood stove in the house, but I have never tried cooking on it - it's really just for heating. But I think I will try popping my cast iron pan on it this winter with some taters and see what happens. Don't know if it will taste any different than on the gas stove, but we shall see.
