Me too! My New Year's resolution was to learn how to ferment, but so far I've only tackled soya yoghurt, which is lovely, although I have purchased a long and complicated book about fermenting vegetables. Every week, I buy expensive jars of sauerkraut from a local health food shop, which I can ill-afford when I know I could make it for pennies if I just had the courage. So, we're nearly halfway through the year, and still no sauerkraut or kimchi. 🙄
PS: I've been using the prickly twigs (well, I've been using dried holly leaves) around the Pak Choi method from a previous video, and so far, so good-no slugs! Simple and effective, I've passed it on to others too. 👍

Love it! Nettles - seaweed and wildcrafter / biologist Ryan Drum relates that when we flash cooking nettles (2-3 minutes) most of the enzymes which make raw nettles so effective remain! I add it last to a stir fry, or make a pesto with quick- cooked nettles. Love the idea of a kombucha second ferment with rhubarb and herbs! I have some bubbling away ... I like soaking and then semi- sprouting dried beans before cooking - and make enough for several meals (freezing some when I make a bit too much!) Dinner tonight was garbanzos off cooked this afternoon with dried mushrooms, kombu (cut into small pieces), cumin and a bay leaf, short grain rice added the last 30 minutes Stir fried in coconut oil baby bok choi and asparagus, added the beans and rice, some tofu, chili lime and onion Seasonings; prepped some Gluten Free white miso, soaked some Wakame, combined and added a few fresh herbs - mmm Mostly organic ingredients.

I enjoy making kombucha, the garden herbs are so good for the second fermentation. Fruits also add a nice flavor as well. I have used twist caps in the second fermentation process to burp the bottles, but I really like the bottler that you used especially if it’s going directly in the refrigerator. Everything you make is beautiful and I can tell it taste amazing. Your videos of your home steading are excellent. The stinging nettles are good for inflammation and for women’s health as well as men’s health. They are so beneficial, it’s nice to see other ways to use them other than traditional teas or medicinal recipes, this is great. Kimchi fried rice is so so delicious and you’re speaking my language on this recipe. It looks divine. Every time I watch your videos I get hungry, your recipes are great. You very well should do a second fermentation video. Some people do their fermentation processes differently, so it would be good to see yours as well.

Love your videos of life in the country. I have lived in the country all of my adult life and am now wrestling with the idea of moving into town so I dont have to work so hard anymore. I am retired and want to ride my bike around the world instead of gardening and tending rescue animals. Very hard decision to make and watching your enthusiasm for country life makes it harder❤

I would love to see a video on fermentation!! I have IBD and am trying to incorporate more fermented foods into my diet, so any tips would be appreciated!
Fermented foods are a great source of vitamin K. The IBD may be from a deficiency of vitamin K and the fermented foods can help with that, but you can also get a vegan source of vitamin K to keep around while you’re in the process of fermenting your recipes. Sourdough bread uses a fermented starter so if you enjoy bread try using a sourdough. Pickles and other pickled fruits and veggies also have may be good to try. Also apple cider vinegar (ACV) is fermented and can be added in small amounts to tea or included in other recipes toward the end and can also be helpful, some people would take a small amount of that on its own as well. If you do make kombucha and let it ferment a little bit longer, you can also make your own vinegar out of it. The kombucha vinegar can also be good to use and is very similar to ACV and you don’t have to do a second fermentation, you can just let the kombucha go a little longer on the first fermentation.
Love your authenticity and peacefulness. Yes, it's rare to have to the time to cook from scratch every day, so I love recipes that keep well for the week.
Hi Gaz, awesome video - very chill and love the Welsh countryside bit. Please add another vote for a fermentation video. I’m pretty good with kombucha but can’t seem to get kimchi or other veggie ferments to work well, so would love some of your excellent instruction, advice, and inspiration.
Would love to see a ferments video! Experimenting with different kombucha flavors is so much fun, I'll have to give that rhubarb and herb one a try this summer. Some of my favorites I've done in the past are dandelion/fennel seed, beet, and straight fennel fronds. Another really amazing one was a batch made with green tea and a little jasmine tea mixed in, and strawberry in F2....it was SO GOOD!

Would love to see a ferments video! Experimenting with different kombucha flavors is so much fun, I'll have to give that rhubarb and herb one a try this summer. Some of my favorites I've done in the past are dandelion/fennel seed, beet, and straight fennel fronds. Another really amazing one was a batch made with green tea and a little jasmine tea mixed in, and strawberry in F2....it was SO GOOD!
