How to make a SCOBY hotel Part II

  • Everything you need to know about a SCOBY Hotel.
    What is a SCOBY hotel? It’s basically just a vessel designated to holding all your extra SCOBY’s. It’s not something required but it’s also not a bad idea just in case you get mold or need extras for experiments. I’ll link the first video here in case you want to go back and watch that. But in a nut shell you’re placing all your extra SCOBY’s, as you acquire them, into a clean glass jar and covering them with kombucha. I
    Side note: If you have a pH meter or strips you could use them. If your starter tea is around 3 or lower it’s a good starter tea. You could also taste the starter tea. Just a little taste like a teaspoon will be sufficient. If it’s still sweet wait longer, if it’s tart and or vinegary it’s good to use.
    How to cover the jar?
    o with a cloth- the liquid will eventually evaporate or turn into SCOBY.
    o Cover with a lid- Liquid wont evaporate but may want to burp the jar every once in a while
     What to cover with- Cloth works best, old t-shirt cut up, cloth napkin. Can use paper town or napkin.
    Where to store? Where it won’t be disturbed. I place mine in a corner of my kitchen on a counter. Pantry, cupboard, some people even put them in a closet.
    How much liquid do I need? Just enough to cover the SCOBY’s
    How many SCOBY’s do I need to keep? That depends on you. If you like to experiment and share you probably want more. If not just a few would do.
    Should I put in the fridge if I know I won’t use them for a while? NO. placing in the fridge will make the bacteria and yeast go dormant. If you remove from the fridge to use there is a good chance you’ll get mold in your kombucha.
    I put it in the fridge, now what do I do? I would let it sit out for a couple week 2-3
    Oh no, I forgot about my hotel and there is no liquid in the jar?
    • If the SCOBY’s are still moist try and 1 cup of sweet tea (2 tea bags, ¼ cup sugar 8oz water). If a SCOBY starts to form at the top you are ok to use them, wait another week to make sure the new tea is good and strong for starter.
    • If a new SCOBY does not form then the bacteria and yeast are probably dead and won’t be viable for making kombucha.
    As I accumulate SCOBY should I get rid of the old ones? That’s up to you. I think the white ones are prettier and aesthetically pleasing, but the dark brown ones work just as well.

    Day 2 and my scoby decided to do a little dance lol. I'm sure I'm not the first person to think of this but kombucha popcycles came to mind. Might be good??? Also what happens if you don't use started tea and you only use a scoby and vice versa? Starter tea but no scoby? I hope all these questions are not becoming a nuisance lol but when I get into something new I'm very excited and want to learn everything. Right now I'm not checking out any other channels becasue I want to learn basics and not have any conflicting info.

      Dont feel bad. I'm the same way. I just started brewing myself but have researched kombucha thoroughly. If you begin a batch without starter tea you have an increased risk of mold growth. If you start a batch with no SCOBY your kombucha will ferment slower but amazingly enough grow it's own as long as you still used a starter tea.

    I have to add sweet tea to my small scoby hotel. Do I also have to add sugar?

      Hi Jeannette. Just add the sugar to your tea. I like to use 8oz water 1/4 c sugar and 2ntea bags. If you need more just double that 😃

    I have recently started making Kombucha, I'm on my third batch. I am trying to learn from the Internet but I'm getting confused. When making Kombucha (fresh brew) do I start with new sweet tea and a cup or 2 of Kombucha. Or, do I start with new sweet tea and a SCOBY...or both new tea AND SCOBY? I've been doing new tea with both starter and SCOBY..

      Hello! Most people do what you do. New fresh sweet tea then add scoby and starter tea (Kombucha). The starter tea is more important than the SCOBY. Its the Kombucha that has the bacteria and yeast in it..I hope this helps 🙏 😉

    DO YOU RECOMMEND SEPERATE HOTELS FOR DIFFERENT TEA TYPES OR IF USING HONEY DURING ONE BATCH AND SUGAR IN ANOTHER??

      Hi Brenda, great question. I don't recommend that however you brought up a good point about using honey. If I were using honey I probably would have a separate hotel for the honey SCOBY. If you are using other sugars like coconut or brown I think the regular hotel would be fine. I haven't tested any of this out but that's what I would do.🍯🍯🍯

    Scoby hotel is for long term storage? What about scoby which we need to keep temporary like 1 week for our next batch brewing. Or we just hv a scoby hotel to store for long term n brewing needs.

      Hi Pauline, SCOBY hotel is usually for long term storage. If you just need to keep a SCOBY temporarily like 1 week, as you stated, just put it in a jar with 1 cup of starter tea. right now I have a SCOBY and some starter that's been sitting in the bottom of my brewing jar for like 3 weeks. I just haven't gotten around to making a new batch of experimental tea. I hope this helps. I post a picture of my jar on IG and tag you on it.

    Question, so I have a couple layers of Scoby but the very top layer (the one exposed to the air) is starting to grow mold on it. But the bottom layers don't.
    Do you think I can just throw out the top layer and use the other scobies or should I throw out the whole thing and start over ?

      Hello. Aw man I'm sorry to hear about that. I would recommend tossing all of it. I personally wouldn't take a chance with mold. Do you know how to grow a new SCOBY?

      @@KombuchaLiz oh ok I'll do so. I do know how to make one. I left it unattended and sitting there for a couple months.. and the weather just started getting hot here in Los Angeles. Do you think that is why mold started growing ?

      @@bbetros I'm not 100% sure that would cause the mold. Do you have any plants, fruits or bread products near your brew? If the mold didn't start growing until a couple months I think it picked up the mold spores from a food near by. That would be my best guess💜💜💜

      Ahh gotcha. I do actually have fruit near by the kombucha.
      Also lately though this sounds a little gross but me being lazy lately I have been leaving unwashed plates over night and washing them the next day lol. And they happen to be sitting pretty much next to the kombucha lol.. do you think that may have contributed as well ?
