As for caps in Christian culture, it came from Persia and it simply meant power. It said, "I am under God's law, not yours." Much of the attire of Christian priests has its origins in the Middle East

I am an Eastern Orthodox Christian and I serve at the altar with my Priest and he has a hat but he only wears it for specific occasions. Most if not all of the Orthodox clergy in the video are Bishops, Metropolitans or in the case of Kyrill, a Patriarch(Metropolitans and Patriarches are both a type of Bishop)
The hats with the drapery are a Russian design and it gets very cold in Russia so it's more of a practical thing that has turned into a tradition cause all the Bishops and Metropolitans of all the Orthodox jurisdictions in the US I have seen wear that hat. I have seen many Priest-monks wear it too. Each color of the vestments that the clergy wear are all symbolic of different things and worn at different times of the year like purple during Great Lent. White, gold, purple, red, green and blue are all the colors.

Dunno who invented our version but around chistmastime we got "baumkuchen" here in germany, wich litereally translates to tree-cake and is made the same way, just without the spikes. You pour sort of liquid waffle dough on sort of big horizontal kebab machine let it bake around, pour another layer..rinse and repeat until you have a log. And when you cut it, you got layers like the rings in a tree stump...hence the name. Some even got a very fine jelly layer every 5th layer. Served in thin cuts with some hot coffee or cacao...lovely during winter/xmas.
