The recipe is more than simple. :D
The big challenge is the 2 devices (the presser and the steamer) for those who jut would like to make these noodles only a few times a year and have limited space in the kitchen.

The best combination for idiyapam is veg stew or korma. Different non-vegetarian curries are also used.

U can have this with chickpea curry and potato curry with gharam masala. Gharammasala taste should very match of this nool put. Whatever curry taste of gharam masala is good taste to nool put.

Thanks for the recipe. But please note that 'Nool' means thread in Malayalam too. And hence the name.
Also, Chutney n Sambhar are not the combination side dishes. Its usually a veg stew prepared in coconut milk. Non vegetarians make Egg curry as the side dish for Idiyappam.

Awesome explanation. However the ideal accompaniment is the kerala Vegetable or Non-Veg stew(egg or meat). With milk and sugar is quite a rarity.

Pl show how thin small r holes in the plate. You didn't show it properly .
This is called as vottu shaavige in Kannada
Pronunciation: woh-ttu shaa-vi-gay (vottu means to press; shaavige is semiya)
It is eaten with coconut chutney and sweet coconut milk preparation. The sweet coconut milk prep is eaten mainly in Udupi, Mangalooru area. Everywhere else, it is eaten with chutney.
It is also cooled and tempered like a simple Vermicelli upma. That's the most delicious but it takes a little longer. Hotels do this as they have a huge press with a solid stand.
At home, it is made for a nice variety. Else, the shaavige is eaten as a plain preparation like shown here.
Sambhar and chutney don't go with it.Best side dish is stew or ,egg roast
