Astringency is the word you were looking for.
This is getting me excited! I just planted a Nakita's Gift this year. It will be my first persimmon I have had since I was a child. I want my kids to make that memory too.

The lighter color which is the non astringent (fuyu) is the one you had. I only got 4 of the other one so I was not able to share it but it was the best as in super sweet but you really have to wait until it is mushy.

This made me chuckle. I just ate a hachiya persimmon today for the first time. The texture was kind of gross but the taste was incredible. It was a little astringent but i kind of liked it that way.

Astringent to siya nga dili pa mushy pero kong gipaabot pa to nako siya until mushy para naku mas lamian gyod siya. Inig bunga pohon ani patilawon tika para you can decide kong duha ba ka tanum imong itanum or usa lang.

Maybe a pinch of salt on the bitter fruit would help make it taste better and less bitter.
